  • 5 slices cucumber, thinly sliced
  • 1 tsp cilantro chutney
  • 3 pieces unexpected cheddar cheese (or Muenster, white sharp cheddar, or pepper jack cheese)
  • Chat masala, to taste

Egg Salad Curry Sandwiches (makes 2-3 sandwiches)

  • 3 eggs, boiled
  • 1 tbsp sour cream or mayonnaise
  • 1/2 tsp curry powder (Trader Joe's brand recommended)
  • 1 tbsp chives, finely chopped
  • 2 green chilies, finely chopped
  • Salt, to taste
  • 1/8 tsp black pepper (adjust as needed)
  • 1 tbsp butter per sandwich, spread on both slices

Veggie Cream Cheese Sandwiches (makes 3-4 sandwiches)

  • 4 ounces cream cheese, at room temperature (Philadelphia brand preferred)
  • 2 tbsp red bell pepper, finely chopped
  • 2 tbsp kalamata olives, finely chopped
  • 2 tbsp fresh cilantro, finely chopped
  • 2 tbsp chives, finely chopped
  • 2 green chilies, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • Chat masala, to taste

Instructions

  1. Cucumber Chutney Cheese Sandwich Preparation: Take two slices of white bread and spread about 1 tablespoon of butter generously on both slices. Apply cilantro chutney on both sides of the bread. Layer five thin slices of cucumber on one slice and add three pieces of your chosen white cheese on the other slice. Sprinkle chat masala to taste, then close the sandwich. Use a serrated knife to carefully slice off the crusts and cut the sandwich into three pieces. Serve immediately.
  2. Egg Salad Curry Sandwich Preparation: Begin by boiling the eggs until hard boiled. Peel and mash the eggs in a bowl, then mix with 1 tablespoon of sour cream or mayonnaise, 1/2 teaspoon curry powder, finely chopped chives, finely chopped green chilies, salt, and black pepper to taste. Take two slices of white bread and spread approximately 1 tablespoon of butter on both sides. Spread a generous amount of the prepared egg salad on one slice, then close the sandwich. Remove the crusts using a knife and slice the sandwich into three pieces before serving.
  3. Veggie Cream Cheese Sandwich Preparation: Allow cream cheese to come to room temperature for easier mixing. In a bowl, combine the cream cheese with finely chopped red bell pepper, kalamata olives, fresh cilantro, chives, green chilies, salt, black pepper, and chat masala. Mix thoroughly until well incorporated. Take two slices of bread and spread a generous amount of the veggie cream cheese mixture on one slice. Close the sandwich, trim off the crusts, then cut it into three pieces. Serve immediately for the best flavor and texture.

Notes

  • Use fresh, thinly sliced cucumbers for the best texture in the chutney cheese sandwiches.
  • Adjust chili quantity according to your spice tolerance, especially in egg salad and veggie cream cheese sandwiches.
  • Butter quality affects flavor; use unsalted high-quality butter if possible.
  • These sandwiches are best served fresh but can be prepared a short time ahead and kept refrigerated.
  • Crust removal gives a classic tea sandwich appearance and a softer bite.
  • For vegetarian option, use vegetarian-friendly cream cheese and mayonnaise alternatives if preferred.
