Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • ½ cup white granulated sugar
  • 3 cups powdered sugar (for glaze)

Wet Ingredients

  • 4 tablespoons unsalted butter, melted
  • ½ cup buttermilk
  • 1 egg
  • ¼ cup sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (for glaze)

Additional Ingredients

  • ⅔ cup frozen blueberries

Instructions

  1. Prepare Dry Ingredients: Whisk together the flour, baking powder, and sea salt in a medium bowl to ensure even distribution of the leavening and seasoning agents.
  2. Mix Wet Ingredients: In a large bowl, combine the melted butter, granulated sugar, buttermilk, egg, sour cream, and vanilla extract. Whisk thoroughly until you achieve a smooth and homogenous mixture.
  3. Combine Wet and Dry: Add the dry ingredient mixture to the wet ingredients. Stir gently until just combined, taking care not to overmix, which could toughen the dough.
  4. Incorporate Blueberries: Toss the frozen blueberries with one tablespoon of flour to prevent them from sinking or bleeding into the dough. Fold them gently into the batter.
  5. Chill the Dough: Cover the bowl with a lid or plastic wrap and refrigerate the dough for 30 minutes to firm it up for easier handling and better texture.
  6. Shape Donut Holes: Using a tablespoon measure, scoop portions of dough and roll each into a ball. Place the balls on a tray lined with parchment paper, spacing them slightly apart.
  7. Preheat Air Fryer: Heat your air fryer to 350°F (175°C) for 3 to 5 minutes to ensure it’s ready for even cooking.
  8. Prepare Air Fryer Basket: Line the basket with a single sheet of parchment paper. Arrange the donut holes in a single layer, leaving space between each to allow hot air to circulate effectively.
  9. Air Fry Donut Holes: Air fry the donut holes for 8 to 10 minutes, flipping them halfway through cooking, until they develop a beautiful golden brown color. Repeat the process with any remaining dough.
  10. Make Blueberry Glaze: In a small bowl, whisk together powdered sugar, milk, and strained blended blueberries until smooth. Adjust consistency with additional milk or powdered sugar if needed.
  11. Glaze and Set: Dip the warm donut holes into the blueberry glaze, then place them on a wire rack or parchment-lined surface to allow the glaze to set before serving.

Notes

  • Use frozen blueberries for better incorporation without breaking up the fruit in the dough.
  • Do not overmix the batter to keep donut holes tender and fluffy.
  • Make sure to preheat the air fryer for evenly cooked donut holes.
  • Flip donut holes halfway during air frying for uniform browning.
  • Adjust the glaze consistency to your preference for thicker coating or lighter drizzle.
  • If you don't have parchment paper designed for air fryer baskets, you can use perforated parchment or lightly grease the basket.
