This Ambrosia Fruit Salad is a classic, creamy, and refreshing dessert salad made with a luscious blend of whipped cream, Greek yogurt, sweetened coconut, and an assortment of canned fruits and mini marshmallows. Perfect for potlucks, holiday gatherings, or a sweet summer treat, this fruit salad combines tangy, sweet, and creamy textures for a delightful dish loved by all ages.

Ingredients

Dressing

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 cup plain Greek yogurt (or vanilla Greek yogurt)

Fruit and Mix-ins

  • 1 cup shredded sweetened coconut
  • 11 ounce can mandarin oranges, drained
  • 8 ounce can pineapple tidbits, drained
  • 1 cup maraschino cherries, drained
  • 1 1/2 cups mini fruit-flavored marshmallows
  • Optional add-ins: chopped pecans, sliced bananas, chopped apples

Instructions

  1. Whip the Cream: Add the heavy whipping cream to a large bowl or stand mixer. Beat with electric beaters for 1-2 minutes until it begins to thicken. Slowly add powdered sugar and continue beating until stiff peaks form. Gently fold in the Greek yogurt until well combined, creating a creamy dressing.
  2. Prepare the Fruit: Drain all canned fruits thoroughly to avoid excess liquid. In a large serving bowl, combine the drained mandarin oranges, pineapple tidbits, maraschino cherries, shredded coconut, and mini marshmallows. Add any optional fruits such as chopped pecans, sliced bananas, or chopped apples if desired.
  3. Combine and Chill: Gently fold the whipped cream mixture into the fruit mixture, making sure everything is evenly coated. Cover and chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld and the salad to firm up slightly.

Notes

  • Make sure to drain canned fruits well to prevent the salad from becoming watery.
  • For added texture, consider adding chopped nuts like pecans or walnuts.
  • Use plain or vanilla Greek yogurt depending on your desired sweetness and flavor profile.
  • This salad tastes best when chilled for at least 30 minutes but can be made a few hours ahead of time.
  • Fresh fruits can be substituted or added based on preference but may alter the texture slightly.
