Ingredients

Meatloaf Ingredients

  • 2 lb Lean ground beef
  • 3 Large eggs
  • 1 cup Breadcrumbs
  • ⅔ cup Green onion, sliced
  • ½ cup Milk
  • ½ cup Fresh parsley, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp Salt
  • ¼ tsp Black pepper
  • 1 (12 ounce) jar Roasted red peppers, drained and trimmed

Toppings

  • 3 ½ cups Hot mashed potatoes
  • 8 Cherry tomatoes

Instructions

  1. Preheat Oven: Preheat your oven to 375 °F to prepare for baking the meatloaf cakes.
  2. Combine Meatloaf Ingredients: In a large bowl, mix together the ground beef, eggs, breadcrumbs, sliced green onions, milk, chopped parsley, minced garlic, Worcestershire sauce, salt, and black pepper until thoroughly combined.
  3. Shape and Bake Meatloaf: Divide the meatloaf mixture evenly between two 8-inch round cake pans, smoothing the tops. Bake in the preheated oven for 20-25 minutes or until the meat is cooked through and reaches an internal temperature of 170 °F.
  4. Rest Meatloaf: Remove the pans from the oven and loosely cover with aluminum foil. Let the meatloaf rest for 10 minutes to allow the juices to redistribute.
  5. Assemble Meatloaf Cake Layers: Carefully discard any juices from the pans. Invert one meatloaf layer onto a serving plate, cover evenly with the roasted red peppers, then place the second meatloaf layer on top, pressing gently.
  6. Apply Mashed Potato Layer: Spread about 2½ cups of warm mashed potatoes evenly over the top and sides of the meatloaf cake with a spatula. Fill a piping bag with the remaining mashed potatoes and decorate the top and sides with twirls, swirls, and stars.
  7. Add Cherry Tomato Decoration: Arrange eight cherry tomatoes stem-ends down in a circle on top of the meatloaf cake to mimic cherries on a cake.
  8. Serve: Slice the meatloaf “cake” into wedge-shaped pieces and serve immediately while warm.

Notes

  • Ensure the meatloaf reaches an internal temperature of 170 °F to guarantee it is fully cooked.
  • Use warm mashed potatoes for easier spreading and piping.
  • If you prefer, substitute the green onions and parsley with other fresh herbs like chives or thyme for variation.
  • The meatloaf cake can be made ahead and refrigerated; reheat gently before decorating with mashed potatoes and tomatoes.
  • For a gluten-free version, use gluten-free breadcrumbs.
