Balsamic Roasted Tomatoes feature slow-roasted tomatoes enhanced with olive oil, balsamic vinegar, and optional fresh oregano, resulting in a rich, tangy, and slightly charred flavor perfect for adding depth to salads, sandwiches, or pasta dishes.

Ingredients

Tomatoes

  • 6 medium tomatoes

Seasonings and Oil

  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil, plus more for storing
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon packed fresh oregano leaves (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375˚F (190˚C) and line a sturdy baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the Tomatoes: Wash and dry the tomatoes thoroughly. Slice them horizontally in half for medium tomatoes; if using large tomatoes, slice into thick slices. Arrange the tomato halves face up on the prepared baking sheet in a single layer.
  3. Season and Drizzle: Lightly sprinkle the tomatoes with Kosher salt and freshly ground black pepper. Drizzle the 2 tablespoons of extra virgin olive oil evenly over the tomatoes, allowing some oil to spread onto the parchment paper. Then, drizzle the balsamic vinegar directly over the face of each tomato half.
  4. Roast the Tomatoes: Place the baking sheet in the oven and roast for about 30 minutes, or until the tomato edges are puckered and lightly charred. Adjust time as needed depending on tomato size: larger tomatoes may require a few extra minutes; smaller cherry tomatoes will need less time.
  5. Pack and Store: Transfer the roasted tomatoes into a clean jar, adding the fresh oregano leaves if using. Pour all the excess oil, balsamic vinegar, and roasted tomato juices collected on the parchment paper into the jar as well. If needed, add about 1 tablespoon of additional olive oil to cover and preserve them.
  6. Refrigerate: Seal the jar and store the balsamic roasted tomatoes in the refrigerator for up to one month to enjoy their enhanced flavor over time.

Notes

  • You can use different tomato varieties such as roma, cherry, or heirloom; adjust roasting times accordingly.
  • Fresh oregano is optional but adds a nice herbal aroma and flavor.
  • Use good quality extra virgin olive oil and balsamic vinegar for best taste.
  • These roasted tomatoes can be served as a side, added to salads, pasta, crostini, or sandwiches.
  • Ensure tomatoes are packed tightly and covered with oil to prevent spoilage.
