These Best Ever Grilled Potatoes in Foil are a perfect side dish for any barbecue or outdoor meal. Featuring tender red potatoes cooked on the grill with flavorful olive oil, onions, and Italian seasoning, they are easy to prepare and pack a delicious smoky flavor.

Ingredients

Vegetables

  • 1 lb. red potatoes, quartered
  • 1 small yellow onion, finely diced

Seasonings & Oil

  • 2-3 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 tablespoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat Grill: Heat your grill to 400ºF to ensure it is ready for cooking the potatoes evenly.
  2. Prepare Potatoes: Wash the red potatoes thoroughly and pat them dry. Cut each potato in half, then in half again to quarter them for quicker, even cooking.
  3. Dice Onion: Finely dice the small yellow onion and combine it with the quartered potatoes.
  4. Season Vegetables: Place the potatoes and diced onion into a large gallon-sized plastic bag. Add olive oil, onion powder, garlic powder, Italian seasoning, and salt and pepper. Seal the bag and shake well to fully coat the vegetables in oil and spices.
  5. Make Foil Pack: Transfer the coated potatoes and onion onto a large piece of heavy-duty aluminum foil. Cover with another piece of foil, and fold the edges tightly to form a sealed packet. Poke a few small holes in the top foil to allow steam to escape.
  6. Grill Potatoes: Place the foil packet directly on the heated grill over direct heat. Close the grill lid and cook for about 20 minutes, or until the potatoes are fork-tender and cooked through to your liking.

Notes

  • Use heavy-duty aluminum foil to prevent tearing and keep the steam inside for better cooking.
  • Feel free to add chopped fresh herbs like rosemary or thyme for extra flavor.
  • Check the potatoes after 15 minutes to avoid overcooking, as grill temperatures can vary.
  • You can prepare the foil packs ahead of time and refrigerate until ready to grill.
  • This recipe pairs well with grilled meats, seafood, or a fresh green salad.
