Ingredients

Dry Ingredients

  • 3 cups rolled oats
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder

Wet Ingredients

  • 2 cups almond milk
  • 1/2 cup maple syrup
  • 2 eggs

Fruit

  • 3 cups blueberries (divided: 2 cups folded in, 1 cup for topping)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly spray a 9 x 13 inch baking dish with oil to prevent sticking, then set aside.
  2. Combine Dry Ingredients: In a large mixing bowl, thoroughly mix the rolled oats, cinnamon, and baking powder to evenly distribute the spices and leavening agent.
  3. Add Wet Ingredients: Create a well in the center of the dry ingredients and pour in the almond milk, maple syrup, and eggs. Mix everything together until the eggs are fully beaten and the wet and dry ingredients are completely incorporated.
  4. Fold in Blueberries: Gently fold 2 cups of blueberries into the oatmeal batter, saving the remaining 1 cup to sprinkle on top.
  5. Transfer to Baking Dish: Evenly spread the oatmeal mixture into the prepared baking dish. Scatter the reserved blueberries evenly across the top to create a fresh, fruity finish.
  6. Bake: Place the dish in the preheated oven and bake for 45-55 minutes, until the oatmeal is set, no longer jiggly, and has a lightly golden brown surface.
  7. Rest and Serve: Remove from oven and allow the baked oatmeal to sit for about 10 minutes. This helps it firm up and makes it easier to serve. Enjoy warm or at room temperature.

Notes

  • Use rolled oats for the best texture; quick oats will result in a softer, less structured bake.
  • Almond milk can be substituted with any other milk of choice, such as dairy or oat milk.
  • Eggs provide structure; for a vegan version, flax eggs can be used as a substitute.
  • Fresh or frozen blueberries both work well; if using frozen, do not thaw before folding into the batter.
