Ingredients

Base

  • 2 naan flatbreads
  • 1 teaspoon olive oil
  • Water (for brushing or spraying)

Honey-Caramelized Onions

  • 1 cup thinly sliced red onion
  • Kosher salt, to taste
  • Pinch of red pepper flakes
  • 2 tablespoons honey

Cheeses and Toppings

  • 1/2 cup ricotta cheese
  • 1/2 cup feta cheese
  • 1 cup blueberries
  • Micro arugula or regular baby arugula, for garnish

Instructions

  1. Preheat and prepare naan: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the naan flatbreads on it. Lightly spray or brush the naan with water to keep it moist during baking. Set aside.
  2. Caramelize the onions: Heat the olive oil in a medium skillet over medium-low heat. Add the thinly sliced red onions, then season with a pinch of kosher salt and red pepper flakes. Cook the onions for about 3-5 minutes, stirring occasionally until they soften and begin to wilt. Stir in the honey and continue cooking, allowing the onions to caramelize and become golden and fragrant. Once caramelized, remove the pan from heat.
  3. Prepare cheese mixture and assemble: In a small bowl, combine the ricotta and feta cheeses, stirring to blend evenly. Spread this cheese mixture generously over each naan flatbread. Top the cheese with the honey-caramelized onions, then scatter the fresh blueberries evenly on top.
  4. Bake the naan pizzas: Place the assembled naan pizzas on the baking sheet into the preheated oven. Bake for approximately 10 minutes, or until the cheese softens, the blueberries start to burst, and the naan is toasted and slightly crisp around the edges.
  5. Finish and serve: Remove the pizzas from the oven and immediately sprinkle with fresh micro arugula or baby arugula for a peppery contrast. Serve the pizzas hot and enjoy.

Notes

  • Use fresh naan flatbreads for the best texture and flavor; store-bought naan works well.
  • You can substitute honey with maple syrup for a vegan-friendly alternative, but adjust diet classification accordingly.
  • For an extra kick, add more red pepper flakes to taste during onion caramelization.
  • Micro arugula provides a delicate finish, but regular baby arugula is an excellent, accessible option.
  • To make the recipe gluten-free, substitute naan with a gluten-free flatbread.
