Ingredients

Base

  • 1 whole angel food cake (homemade or store-bought)

Pudding Layer

  • 1 package (3.4 ounces) instant lemon pudding mix
  • 1½ cups (368 g) milk
  • 1 cup sour cream

Fruit and Toppings

  • 1 can (21 ounces) blueberry pie filling
  • 8 ounces whipped topping (homemade or store-bought)
  • 1 tablespoon lemon zest (for garnish, optional)

Instructions

  1. Cut cake into cubes. Carefully slice the angel food cake into cubes using a serrated knife. Take your time to avoid crumbling, as this step is crucial for the texture of the dessert.
  2. Prepare pudding mixture. In a large bowl, combine the instant lemon pudding mix, milk, and sour cream. Using a hand-held mixer, beat on medium-high speed for about 2 minutes until smooth and thickened. Set aside.
  3. Arrange base layer. Spread half of the angel food cake cubes evenly in the bottom of a 9x13-inch baking dish, creating the first layer.
  4. Add blueberry pie filling. Spoon half of the blueberry pie filling evenly over the cake cubes, distributing it gently.
  5. Layer remaining cake cubes. Place the remaining angel food cake cubes on top of the blueberry filling layer, covering it completely.
  6. Spread lemon pudding. Evenly spoon and spread the lemon pudding mixture over the top layer of cake cubes to form a smooth layer.
  7. Top with whipped cream. Dollop the whipped topping over the lemon pudding layer. Using an offset spatula or the back of a spoon, spread it into an even layer.
  8. Finish with remaining blueberry filling. Carefully spoon the remaining blueberry pie filling over the whipped topping, spreading it gently to the edges.
  9. Garnish and chill. Optionally sprinkle lemon zest on top for a fresh citrus aroma. Cover the dish and refrigerate the dessert for 3 to 4 hours, allowing flavors to meld and the dessert to set.
  10. Serve cold. Once chilled, serve the Blueberry Lemon Heaven Dessert cold, scooping portions to enjoy the layered flavors and textures.

Notes

  • Use a serrated knife for cutting the angel food cake to minimize crumbling.
  • Allow the dessert at least 3 hours in the refrigerator to set properly for best texture and flavor blending.
  • Can be prepared up to a day ahead, making it convenient for gatherings and potlucks.
  • For a lighter variation, opt for low-fat sour cream and reduced-fat whipped topping.
  • Fresh blueberries can be substituted for pie filling if preferred, though pie filling provides a consistent sweetness and texture.
