Cauliflower Parmesan is a delicious, low-carb alternative to traditional Parmesan dishes. Thick slices of roasted cauliflower are seasoned with Italian herbs, topped with marinara sauce and fresh mozzarella, then baked until bubbly and golden. Finished with crispy garlic butter breadcrumbs, parmesan cheese, and fresh basil, this vegetarian main course offers a flavorful and healthy twist on a classic Italian favorite.

Ingredients

Cauliflower Slices

  • 1 large head cauliflower, sliced into 1-inch thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Toppings

  • 1 cup marinara sauce
  • 8 ounces fresh mozzarella cheese, sliced
  • 3 tablespoons parmesan cheese, for topping
  • Fresh basil, for topping

Garlic Butter Breadcrumbs

  • 1 tablespoon unsalted butter
  • 1 garlic clove, minced or pressed
  • 1/3 cup seasoned panko bread crumbs

Instructions

  1. Preheat oven and slice cauliflower: Preheat the oven to 425 degrees F. Slice the cauliflower from the top down into 1-inch thick slices and arrange them on a baking sheet.
  2. Season and roast cauliflower: Drizzle or brush the cauliflower slices with olive oil, then sprinkle with Italian seasoning, salt, and pepper. Roast in the oven for 15 minutes.
  3. Add marinara and mozzarella: After 15 minutes, spoon marinara sauce over each cauliflower slice and place a slice of fresh mozzarella on top. Return to the oven and bake for an additional 15 minutes, until the cheese is melted and bubbly.
  4. Prepare garlic butter breadcrumbs: While the cauliflower bakes, heat butter in a skillet over medium-low heat. Stir in minced garlic and cook for a few seconds, then add the panko breadcrumbs. Cook, stirring often, for 2 to 3 minutes until golden and crispy.
  5. Finish and serve: Remove the baked cauliflower from the oven. Sprinkle garlic butter breadcrumbs, parmesan cheese, and fresh basil over the top before serving.

Notes

  • Use thick cauliflower slices to ensure they hold together during roasting and baking.
  • Seasoned panko breadcrumbs add a flavorful crunch, but you can use plain panko with added Italian herbs if preferred.
  • For a vegan version, substitute mozzarella and parmesan with plant-based cheese alternatives.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
