A refreshing and nutritious cauliflower salad featuring a zesty lemon dressing, sweet medjool dates, and crunchy pistachios, perfect as a light side dish or a healthy snack.

Ingredients

Dressing

  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 2 tsp maple syrup
  • 1/2 tsp Dijon mustard
  • 1/2 tsp sea salt

Salad

  • 1 small-medium head cauliflower, leaves and stem removed (about 5 cups or 450 g thinly sliced)
  • 1/3 cup pitted dates, diced into 1/8-1/4 inch pieces (Medjool dates recommended)
  • 1/3 cup chopped pistachios (roasted salted preferred, or substitute pine nuts)
  • 1/3 cup chopped fresh parsley (or substitute fresh cilantro)

Instructions

  1. Prepare the Dressing: In a large mixing bowl, combine lemon zest, lemon juice, olive oil, maple syrup, Dijon mustard, and sea salt. Whisk thoroughly until the dressing is well emulsified and flavors are blended.
  2. Slice the Cauliflower: Using a mandolin or a sharp knife, thinly slice the cauliflower vertically into thin slices, including some of the core to help keep the pieces intact. Transfer the sliced cauliflower to the bowl with the dressing.
  3. Combine Salad Ingredients: Add the diced medjool dates, chopped pistachios, and chopped fresh parsley to the cauliflower and dressing mixture. Toss gently but thoroughly to coat all ingredients with the dressing evenly.
  4. Serve and Store: This salad is best enjoyed fresh. However, leftovers can be stored in a sealed container in the refrigerator for up to 2-3 days. Note that it is not suitable for freezing.

Notes

  • Use Medjool dates for natural sweetness and chewy texture.
  • Thin slicing of cauliflower helps achieve a pleasant crunch and better dressing absorption.
  • Substitute pistachios with pine nuts if preferred or for allergy considerations.
  • Freshness is key; consume within 2-3 days for best taste.
  • Not a freezer-friendly salad due to texture changes upon thawing.
