These Cheddar and Chive Savory Scones are a deliciously fluffy and flavorful baked good, perfect for breakfast, brunch, or a snack. Made with sharp cheddar cheese and fresh chives, these scones offer a savory twist on a classic treat. The recipe involves mixing the ingredients, lightly kneading the dough, and baking to golden perfection, resulting in warm, cheesy scones with a tender crumb and a golden crust.

Ingredients

Dry Ingredients

  • 2 1/2 cups all purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 1/2 cup salted butter
  • 3 large eggs (2 for scones, 1 for egg wash)
  • 2/3 cup buttermilk (or 1 tablespoon vinegar + 2/3 cup milk combined)

Flavorings

  • 2/3 cup grated sharp cheddar cheese
  • 1/4 cup chopped chives (or green onions)
  • Additional 1/4 cup grated sharp cheddar cheese for topping

Instructions

  1. Preheat Oven: Set your oven to 375 degrees Fahrenheit to get it ready for baking the scones.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt thoroughly.
  3. Cut in Butter: Using a pastry cutter or food processor, cut the cold salted butter into the flour mixture until it resembles coarse crumbs.
  4. Combine Wet Ingredients: Whisk 2 of the eggs and mix with the buttermilk (or milk and vinegar mixture) in a separate bowl.
  5. Mix Dough: Add the wet ingredients to the flour mixture and stir just until moistened. Then fold in the shredded cheddar and chopped chives lightly—the dough will be sticky.
  6. Knead and Shape: Turn the sticky dough out onto a floured surface and knead lightly to bring it together. Divide the dough into two halves and roll each into a circle about 3/4 inch thick. Cut each circle into 4 equal wedges.
  7. Apply Egg Wash: Whisk the remaining egg in a small dish and brush the tops of the scones evenly to help them brown nicely.
  8. Rest Dough: Allow the scones to rest for about 10 minutes to activate the baking powder, which helps them rise higher and become fluffier.
  9. Add Cheese Topping: Sprinkle approximately a tablespoon of grated cheddar cheese on top of each scone.
  10. Bake: Place the scones in the preheated oven and bake for 20 minutes or until golden brown on the edges. Remove and serve warm.

Notes

  • For a buttermilk substitute, combine 1 tablespoon vinegar with 2/3 cup milk and let sit for a few minutes.
  • Resting the scones before baking is essential for fluffier results due to baking powder activation.
  • Use cold butter for a flakier texture.
  • Chives can be substituted with green onions if preferred.
  • These scones are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
