Delicious and flaky cheese scones made with a blend of yellow and white cheddar cheese, perfect for a savory snack or accompaniment to tea. These scones are easy to prepare, baked to golden perfection, and can be enjoyed warm with optional fresh chives and butter for added flavor.

Ingredients

Dry Ingredients

  • 2 ½ cups all purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup cold unsalted butter, cut into small cubes
  • 2 eggs, lightly beaten
  • 1 cup cream, plus a few tablespoons more if needed

Cheese

  • 1 ½ cups shredded yellow and white cheddar cheese blend

Optional Garnishes

  • Fresh chives
  • Butter for serving

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400 degrees F and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all purpose flour, baking powder, and salt to combine evenly.
  3. Cut in Butter: Using a pastry cutter, your hands, or a food processor, cut the cold butter into the flour mixture until it resembles fine breadcrumbs, ensuring the butter remains cold for flaky texture.
  4. Create Well: Make a well in the center of the flour and butter mixture and set it aside for the wet ingredients.
  5. Prepare Egg and Cream Mixture: In a small bowl, mix the lightly beaten eggs and cream thoroughly. Reserve about ⅛ cup of this mixture for brushing the tops of the scones before baking.
  6. Combine Mixtures: Pour the remaining egg and cream mixture into the well of the dry ingredients and gently fold just until combined to maintain a tender crumb.
  7. Add Cheese: When the mixture is nearly incorporated, fold in 1 cup of the shredded cheddar cheese, reserving the remaining ½ cup for topping.
  8. Shape and Cut Dough: Gently shape the dough into an 8-inch circle on a lightly floured surface. Using a knife or bench scraper, cut the circle into 8 equal slices, resembling pie pieces, and place them on the prepared baking sheet.
  9. Brush and Top: Brush the reserved egg and cream mixture over the top of each scone slice, then sprinkle the remaining shredded cheese evenly over the tops.
  10. Bake: Bake in the preheated oven for 15-20 minutes, or until the scones develop a golden-brown color on top.
  11. Serve: Serve the scones warm right from the oven. Optionally, top with fresh chives and melted butter for added flavor and richness.

Notes

  • Make sure the butter is very cold to achieve flaky scones.
  • Do not overmix the dough to prevent tough scones; fold gently just until combined.
  • Feel free to add fresh herbs like chives or thyme directly into the dough for added flavor.
  • You can substitute cream with whole milk if needed, though cream yields a richer texture.
  • Serve scones warm for the best taste and texture.
