It's an easy-to-make, hearty dish perfect for family dinners that delivers warmth and flavor in every bite.

Ingredients

Chicken Mixture

  • 4 cups cooked and shredded chicken
  • 12 ounces frozen carrots and peas
  • 10 ounce can cream of chicken soup
  • 1 1/2 cups chicken broth

Biscuit Topping

  • 11 ounce box cheddar bay biscuit mix (including seasoning packet)
  • 2 cups milk

Others

  • 1/2 cup butter

Instructions

  1. Preheat oven and prepare butter: Preheat your oven to 350°F. Melt 1/2 cup of butter and pour it evenly into the bottom of a 9 x 13-inch casserole pan to create a flavorful base.
  2. Add chicken: Sprinkle the 4 cups of cooked and shredded chicken evenly over the melted butter to form the bottom layer of the casserole.
  3. Layer vegetables: Spread the 12 ounces of frozen carrots and peas evenly over the layer of chicken, adding vibrant color and nutrition.
  4. Prepare and add biscuit topping: In a bowl, stir together the 11 ounce box of cheddar bay biscuit mix with 2 cups of milk until just combined. Pour this mixture over the chicken and vegetables evenly, but do not stir, to allow the biscuit to bake on top.
  5. Mix and pour soup mixture: Combine the 10 ounce can of cream of chicken soup with 1 1/2 cups of chicken broth, mixing thoroughly. Pour this mixture gently over the entire casserole without stirring to ensure even baking.
  6. Bake: Place the casserole uncovered in the preheated oven and bake for 45 minutes. Afterward, continue baking in 10-minute increments until the biscuit topping is golden brown and cooked through, especially around the edges, ensuring a crisp and delicious crust.

Notes

  • Use cooked chicken from rotisserie or leftover roasted chicken for convenience.
  • Do not stir after pouring the biscuit mix and soup mixture to maintain distinct layers and proper baking texture.
  • If you prefer, you can substitute frozen mixed vegetables for carrots and peas.
  • Check the biscuit topping towards the end to avoid overbrowning.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
