Delight in these rich and chewy Chocolate Coconut Cookies, combining the tropical flavor of shredded coconut with decadent chocolate. Easy to make with simple ingredients and no baking required, these cookies are perfect for a quick treat or a gluten-free dessert option.

Ingredients

Cookies

  • 4 cups unsweetened shredded coconut
  • 1/4 cup sugar
  • 1/2 cup coconut milk
  • 2 cups chocolate chips

Instructions

  1. Prepare the tray: Line a large baking tray or platter with parchment paper and set it aside to prevent sticking and for easy cleanup.
  2. Blend the coconut and sugar: Place the unsweetened shredded coconut in a high-speed blender or food processor and pulse until the texture becomes fine. Add the sugar and continue blending for an additional minute to evenly combine.
  3. Add coconut milk and form dough: Pour in the coconut milk and blend further, scraping down the sides as needed. Blend until a thick dough forms. Transfer the dough to a large mixing bowl.
  4. Shape the cookies: Lightly wet your hands to prevent sticking and form small balls from the dough. Place them on the prepared tray and gently press each ball into a cookie shape. Place the tray in the freezer to firm up the cookies.
  5. Melt the chocolate: While the cookies firm up, melt the chocolate chips gently using a double boiler or microwave in short bursts, stirring frequently to avoid burning.
  6. Coat the cookies: Once the cookies are firm, use two forks to dip each cookie into the melted chocolate, ensuring they are fully covered. Repeat until all cookies are coated.
  7. Chill to set: Place the chocolate-coated cookies in the refrigerator until the chocolate is fully set and firm.

Notes

  • Use unsweetened shredded coconut to control the sweetness.
  • You can substitute sugar with a granulated sweetener like erythritol for a lower-sugar version.
  • If you don't have coconut milk, full-fat dairy milk can be used but will slightly alter the flavor.
  • For a vegan variation, ensure chocolate chips are dairy-free.
  • Keep cookies refrigerated to maintain firmness, especially in warm climates.
  • Allow cookies to come to room temperature for a few minutes before serving for best flavor and texture.
