Ready in just 10 minutes with minimal prep, these bars are both nutritious and delicious.

Ingredients

Protein Bar Base

  • 1 1/2 cups peanut butter
  • 1 1/2 cups plant-based vanilla protein powder
  • 3/4 cup almond flour
  • 2/3 cup maple syrup (or agave syrup)

Chocolate Topping

  • 1/2 cup vegan chocolate chips
  • 1 Tablespoon coconut oil

Toppings (Optional)

  • Flaky sea salt
  • Chopped pistachios

Instructions

  1. Mix Protein Bar Base: In a large mixing bowl, combine the peanut butter, plant-based vanilla protein powder, almond flour, and maple syrup. Stir everything together thoroughly until you get a smooth, cohesive mixture.
  2. Pour Into Baking Pan: Line an 8x8 inch baking pan with parchment paper. Transfer the protein bar mixture into the pan and spread it evenly, pressing down to form a compact layer.
  3. Melt Chocolate: In a microwave-safe bowl, combine the vegan chocolate chips and coconut oil. Microwave for 30-45 seconds in short bursts, stirring frequently until the mixture is completely melted and smooth.
  4. Spread Over Bars: Evenly spread the melted chocolate mixture over the top of the protein bar layer. Sprinkle with flaky sea salt and chopped pistachios if desired.
  5. Set the Bars: Place the baking pan in the freezer for 15-20 minutes to allow the bars and chocolate topping to set and firm up.
  6. Slice & Enjoy: Once set, remove the bars from the pan by lifting the parchment paper. Cut into 16 equal bars and enjoy your protein-packed treat.

Notes

  • You can substitute maple syrup with agave syrup or another liquid sweetener of your choice.
  • For a nut-free option, try substituting peanut butter with sunflower seed butter and almond flour with oat flour.
  • Store the bars in an airtight container in the refrigerator or freezer to keep them fresh.
  • These bars make a perfect grab-and-go breakfast or post-exercise snack.
  • Add chopped nuts or seeds to the base mixture for additional crunch and nutrition if desired.
