A classic Southern-style Peach Cobbler featuring juicy, tender peaches baked under a sweet, cinnamon-spiced biscuit topping. This comforting dessert is perfect for summertime and is best served warm with a scoop of vanilla ice cream.

Ingredients

Peach Filling

  • 6-7 large peaches (about 900 grams), sliced
  • ½ cup granulated sugar (100 grams)
  • 2 teaspoons cornstarch (6 grams)
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon lemon juice (14 grams)

Batter

  • 8 tablespoons salted butter (113 grams / 1 stick)
  • 1¼ cups all-purpose flour (150 grams)
  • 1½ teaspoons baking powder (6 grams)
  • ½ teaspoon kosher salt
  • ½ cup granulated sugar (100 grams)
  • ½ cup brown sugar (107 grams)
  • ½ teaspoon ground cinnamon
  • ¾ cup milk (170 grams)
  • 2 teaspoons pure vanilla extract (8 grams)

Instructions

  1. Preheat and Prepare Peaches: Preheat the oven to 350°F (175°C). Wash the peaches thoroughly and slice them into wedges to prepare for the filling.
  2. Mix Peach Filling: In a large bowl, combine the sliced peaches, granulated sugar, cornstarch, ground cinnamon, and lemon juice. Gently stir to coat the peaches evenly. Set aside for the sugar to draw out the juices.
  3. Melt Butter in Baking Dish: Place the butter in a 9x13-inch baking dish and put it in the preheated oven to melt while you prepare the batter.
  4. Prepare Batter Dry Ingredients: In a separate large bowl, whisk together the flour, baking powder, kosher salt, granulated sugar, brown sugar, and cinnamon until well combined.
  5. Combine Wet and Dry Ingredients: Mix milk and vanilla extract in a measuring cup, then pour into the bowl with dry ingredients. Stir gently until the batter is smooth without overmixing.
  6. Assemble Cobbler Base: Carefully remove the hot baking dish with melted butter from the oven. Pour the batter evenly over the melted butter, but do not stir it in.
  7. Add Peach Filling on Top: Spoon the peach mixture evenly over the batter, including the juices for extra flavor and moisture.
  8. Bake: Place the baking dish in the oven and bake for 40-45 minutes until the cobbler crust is golden brown and bubbly around the edges.
  9. Cool and Serve: Remove the cobbler from the oven and allow it to cool for about 5 minutes. Serve warm with vanilla ice cream for an indulgent treat.

Notes

  • To enhance flavor, use ripe, sweet peaches for best results.
  • If peaches are not in season, frozen peaches can be used, preferably thawed and drained slightly.
  • Adjust sugar quantity depending on peach sweetness.
  • Make sure not to stir the batter and peaches after assembling to keep the distinct layers.
  • For a dairy-free version, substitute butter and milk with vegan alternatives.
  • The cobbler can be reheated gently in the oven or microwave before serving.
