Ingredients

Wet Ingredients

  • 2 large eggs, lightly beaten
  • 1 cup vegetable oil
  • 1¼ cups milk
  • 1 tablespoon vanilla extract

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Cinnamon Sugar Topping

  • 1¼ cups packed light brown sugar
  • 1 tablespoon ground cinnamon
  • ¼-⅓ cup unsalted butter, melted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish and set it aside to prepare for the batter.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the lightly beaten eggs, vegetable oil, milk, and vanilla extract until fully combined and smooth.
  3. Combine Dry Ingredients: In a separate medium bowl, thoroughly mix the all-purpose flour, sugar, baking powder, and salt to ensure even distribution of the leavening agent and salt.
  4. Combine Batter: Gradually add the dry ingredients to the wet mixture, stirring well until the batter is smooth and homogeneous. Pour half of this batter into the prepared baking dish, spreading it evenly.
  5. Prepare Cinnamon Sugar: In another medium bowl, mix the packed light brown sugar with ground cinnamon until evenly blended to create the flavorful cinnamon sugar layer.
  6. Layer the Cake: Sprinkle half of the cinnamon sugar mixture evenly over the batter in the baking dish. Carefully spread the remaining batter over this cinnamon sugar layer in an even layer. Then sprinkle the rest of the cinnamon sugar on top of the batter.
  7. Add Butter Topping: Drizzle the melted unsalted butter evenly over the entire top of the assembled batter and cinnamon sugar layers, adjusting the amount to your preference for richness.
  8. Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out with just a few moist crumbs attached.
  9. Serve: Allow the coffee cake to cool slightly, then serve warm to enjoy its tender crumb and rich cinnamon flavor at its best.

Notes

  • Use room temperature eggs and milk to help the batter mix more smoothly.
  • Do not overmix the batter once wet and dry ingredients are combined to keep the cake tender.
  • The amount of melted butter drizzled on top can be adjusted for a richer or lighter finish.
  • For extra texture, you can add chopped nuts like walnuts or pecans to the cinnamon sugar layer.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
  • Reheat slices gently in the microwave for a warm, fresh-from-the-oven experience.
