This creamy, comforting creamed corn recipe features tender corn kernels simmered in a rich, buttery sauce with finely chopped onions and a touch of seasoning. Perfect as a side dish for any meal, it comes together quickly on the stovetop and can be garnished with fresh green onions for added color and flavor.

Ingredients

Main Ingredients

  • 2 Tablespoons salted butter
  • ⅓ cup finely chopped onion
  • 1 Tablespoon all-purpose flour
  • 4 cups fresh or frozen corn (20 oz)
  • 2 teaspoons granulated sugar
  • ¾ teaspoon salt (plus more to taste)
  • ⅛ teaspoon ground black pepper
  • 1 ⅓ cups half and half

Optional Garnish

  • Thinly sliced green onions for garnish

Instructions

  1. Melt Butter: In a large skillet over medium heat, melt the salted butter completely, preparing the base for the sauce.
  2. Sauté Onions: Add the finely chopped onions to the melted butter and cook, stirring frequently, until they become soft and translucent, about 3 minutes.
  3. Add Flour: Sprinkle the all-purpose flour evenly over the cooked onions. Stir constantly to absorb the flour into the butter and onions, then continue stirring for another 30 seconds to lightly toast the flour, which helps thicken the sauce without a raw flour taste.
  4. Mix in Corn and Seasonings: Add the fresh or frozen corn kernels, granulated sugar, salt, and ground black pepper to the skillet. Stir well to combine all the ingredients evenly.
  5. Add Half and Half and Simmer: Slowly drizzle in the half and half while continuously stirring to prevent lumps. Bring the mixture to a gentle simmer and cook, stirring frequently, until the sauce thickens to a creamy consistency. Taste and adjust salt and pepper as needed.
  6. Serve: Serve the creamed corn warm, garnished with optional thinly sliced green onions for a fresh, vibrant touch.

Notes

  • For a richer flavor, whole milk can substitute half and half, but the sauce will be less creamy.
  • Fresh corn is preferred for the best texture and sweetness, but frozen corn works well too.
  • You can make this dish ahead and gently reheat it on low, adding a splash of half and half if it thickens too much.
  • Adding a pinch of smoked paprika or cayenne can provide a subtle smoky or spicy twist.
