It is an easy-to-make, comforting meal that delivers moist, flavorful salmon alongside perfectly cooked potatoes.

Ingredients

Salmon and Potatoes

  • 2 lb (1 kg) fresh salmon fillet, skin-on
  • 2 lb (1 kg) potatoes, washed but unpeeled
  • 2 tablespoons olive oil

Seasonings and Cream

  • 1 cup cooking cream (heavy whipping cream or vegan cream)
  • Rosemary, to taste
  • 1 teaspoon salt (or more to taste)
  • Himalayan sea salt, to taste
  • 1 tablespoon paprika
  • 3 cloves garlic, minced
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat and Prepare Baking Tray: Preheat your oven to 400°F (205°C) and line a baking tray with baking paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Salmon and Potatoes: Wash and dry the salmon fillet thoroughly, then place it skin-side down on the prepared baking sheet. Cut the washed, unpeeled potatoes into large segments and arrange them evenly around the fish on the tray.
  3. Season with Olive Oil and Spices: Drizzle olive oil over both the fish and the potatoes to encourage browning and flavor. Season the potatoes with paprika, salt, and half of the minced garlic to infuse taste.
  4. Add Initial Cream and Herbs: Pour half of the cooking cream over the salmon, spreading a thin layer to ensure moisture during baking. Sprinkle rosemary and the remaining chopped garlic over the salmon. Season everything with salt and freshly ground black pepper.
  5. Cover and Bake: Cover the baking tray tightly with tin foil to trap steam and bake in the preheated oven for 20 minutes. After 10 minutes, add some more cream over the fish.
  6. Finish Baking: Check that the potatoes are tender enough to be pierced with a fork and the salmon is mostly cooked. Lower the oven temperature to 375°F (190°C). Remove the foil, pour the remainder of the cream over the salmon, and bake uncovered for an additional 10 minutes to achieve a golden top and fully cooked salmon.
  7. Serve: Remove the dish from the oven, allow it to rest briefly, then serve the creamy baked salmon with the roasted potatoes, enjoying the rich flavors and tender textures.

Notes

  • You can substitute heavy cream with a vegan cream alternative to make the dish dairy-free.
  • Use freshly ground black pepper for the best flavor.
  • Make sure not to overcook the salmon to preserve its moist texture.
  • Washing and leaving the potato skins on adds texture and nutrients.
  • Adjust seasoning according to personal taste, especially salt and paprika.
