Ingredients

Seasoning Mix

  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper

Chicken & Cooking

  • 2 boneless, skinless chicken breasts (about 1.3 lb.)
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 2 cloves garlic, minced

Sauce

  • 1 cup chicken broth
  • 1 Tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/3 cup heavy cream
  • 2 Tbsp grated Parmesan cheese

Vegetables

  • 2 cups fresh spinach

Instructions

  1. Prepare seasoning: In a small bowl, combine Italian seasoning, garlic powder, onion powder, salt, and freshly cracked black pepper to create the chicken seasoning mix.
  2. Slice and season chicken: Carefully fillet each chicken breast into two thinner cutlets using a sharp knife. Season both sides of each chicken cutlet evenly with the prepared seasoning mix.
  3. Cook chicken: Heat a large skillet over medium heat and add olive oil. Once hot, add chicken cutlets and cook each side until golden brown and cooked through, approximately 4 minutes per side. Remove the chicken to a clean plate and cover to keep warm.
  4. Sauté garlic: In the same skillet, add butter and minced garlic. Reduce heat to medium-low and sauté garlic for about 1 minute until fragrant, being careful not to burn it.
  5. Make sauce base: Pour chicken broth into the skillet and add Dijon mustard and Worcestershire sauce. Stir well while scraping up any brown bits from the pan bottom to incorporate flavor.
  6. Add cream and cheese: Stir in heavy cream and grated Parmesan cheese. Let the sauce simmer for 5 minutes to thicken slightly. Taste and adjust seasoning with additional salt and pepper if desired.
  7. Wilt spinach: Add fresh spinach to the sauce and stir until wilted by the residual heat.
  8. Combine and serve: Return cooked chicken breasts to the skillet and spoon the creamy Dijon sauce over them. Allow the chicken to heat through for a minute before serving hot with your favorite sides.

Notes

  • Filleting the chicken breasts into cutlets helps them cook evenly and quickly.
  • Use fresh spinach for best texture and flavor; other greens can be substituted if desired.
  • Adjust seasoning in the sauce after simmering to balance the flavors.
  • Serve with rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
  • For a lighter version, substitute heavy cream with half-and-half or a light cream alternative.
