A quick 30-minute recipe perfect for a satisfying vegetarian meal.

Ingredients

Pasta and Sauce

  • 10 oz short cut pasta
  • 3 ears of corn, kernels removed
  • 2 tbsp vegan or dairy butter
  • 1 tbsp olive oil
  • 1/2 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tbsp white miso
  • 1/2 cup coconut cream
  • 1 tbsp lemon juice
  • Freshly ground black pepper, to taste
  • Fresh basil, for serving

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to package directions. Reserve 1 cup of the pasta cooking water before draining the pasta. Toss the drained pasta with olive oil to prevent sticking.
  2. Sauté the vegetables: In a large pot, heat the butter and olive oil over medium heat until shimmering. Add the corn kernels, chopped onion, minced garlic, and thyme. Cook, stirring occasionally, for 5-7 minutes until the vegetables are softened and fragrant.
  3. Blend the sauce: Transfer half of the sautéed vegetable mixture to a high-speed blender. Add the white miso, coconut cream, and 1/2 cup of the reserved pasta water. Blend until the mixture is very smooth and creamy.
  4. Simmer the sauce with pasta: Pour the puréed mixture back into the pot with the remaining sautéed vegetables and bring the sauce to a gentle simmer. Add the cooked pasta to the pot and cook for 2-3 minutes, tossing gently, until the pasta is fully coated and tender. Add additional reserved pasta water as needed to achieve desired sauce consistency.
  5. Finish and serve: Remove the pot from heat and stir in the lemon juice to brighten the flavors. Serve warm, garnished with fresh basil leaves and freshly ground black pepper.

Notes

  • To remove corn kernels easily, stand the ear of corn upright and slice downward with a sharp knife.
  • Use vegan butter to keep the recipe fully plant-based.
  • Adjust lemon juice to taste for a brighter flavor balance.
  • Reserve extra pasta water as it helps to create a silky sauce consistency.
  • Fresh thyme adds the best flavor, but dried thyme can be substituted in smaller quantities.
