Ingredients

Chicken

  • 4 boneless skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Mushrooms & Sauce

  • 8 ounces sliced mushrooms
  • 1/4 cup butter
  • 2 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream or half and half
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup chopped spinach

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced chicken breasts, seasoning with salt and pepper. Cook for 3 to 5 minutes on each side, or until the chicken is browned on both sides and no longer pink in the center. Remove the chicken from the skillet and set aside on a plate.
  2. Sauté Mushrooms: In the same skillet, add the sliced mushrooms. Cook for a few minutes until they become tender and slightly browned. Remove the mushrooms and set them aside with the chicken.
  3. Prepare the Sauce: Add butter to the skillet and melt over medium heat. Stir in the minced garlic and cook until fragrant and tender, about 1 minute. Whisk in the flour continuously until the mixture thickens slightly, forming a roux.
  4. Add Liquids and Seasonings: Gradually whisk in the chicken broth, heavy cream, and grated parmesan cheese. Add garlic powder, black pepper, and salt, stirring continuously to blend all ingredients until smooth and creamy.
  5. Add Spinach and Simmer: Stir in the chopped spinach and let the sauce simmer until it starts to thicken and the spinach wilts, approximately 3 to 5 minutes.
  6. Combine Chicken and Mushrooms: Return the cooked chicken and mushrooms to the skillet, coating them well with the creamy sauce. Heat through for 1 to 2 minutes.
  7. Serve: Serve the creamy parmesan garlic mushroom chicken hot, optionally over pasta, rice, or your preferred side dish to soak up the delicious sauce.

Notes

  • Use thinly sliced chicken breasts to reduce cooking time and ensure even cooking.
  • Heavy cream will give a richer sauce, but half and half can be used for a lighter option.
  • Grated parmesan cheese adds a salty, nutty flavor; freshly grated is best.
  • Serve with pasta, mashed potatoes, or crusty bread to enjoy the creamy sauce fully.
  • Adjust salt and pepper seasonings to taste, especially if using salted butter or broth.
  • Fresh spinach is recommended, but you can substitute with frozen spinach, thawed and drained.
