Creamy Tuscan Gnocchi is a rich and comforting Italian-inspired dish featuring tender potato gnocchi sautéed and simmered in a luscious sauce made with butter, heavy cream, chicken broth, sun-dried tomatoes, garlic, and fresh spinach. Finished with Parmesan cheese and fresh herbs, this quick and easy skillet recipe delivers deep flavors and a creamy texture perfect for a satisfying meal.

Ingredients

Main Ingredients

  • 1 pound uncooked potato gnocchi
  • 1 yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 1/2 cups baby spinach
  • 2 tbsp butter
  • 1 1/4 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes in oil
  • 1 tsp Italian seasoning
  • 1/2 cup fresh grated Parmesan cheese
  • 2 tbsp fresh chopped basil and/or parsley
  • Salt and pepper to taste

Instructions

  1. Sauté Onion and Garlic: Melt the butter in a large skillet over medium-high heat. Add the chopped onion and sauté until tender, about 2 minutes. Then add the minced garlic and cook for 30 seconds until fragrant.
  2. Sear Gnocchi: Add the uncooked potato gnocchi to the skillet and sear in the flavored butter for one minute, allowing the gnocchi to get a slight golden crust.
  3. Add Liquids and Seasoning: Stir in the sun-dried tomatoes, chicken broth, heavy cream, and Italian seasoning. Season the mixture with salt and pepper to taste, ensuring balanced flavor.
  4. Simmer Covered: Reduce the heat to medium, cover the pan with a lid, and let the mixture cook for 5 minutes. This allows the gnocchi to cook through and the sauce to begin thickening.
  5. Add Spinach: Stir in the baby spinach and cook uncovered for an additional minute, or until the spinach has wilted but remains vibrant.
  6. Incorporate Cheese and Final Simmer: Add freshly grated Parmesan cheese to the skillet and let the dish simmer for 2 more minutes. This step thickens the sauce further and softens the gnocchi completely.
  7. Serve: Remove the skillet from heat, garnish with fresh chopped basil or parsley, and serve the creamy Tuscan gnocchi hot for the best flavor experience.

Notes

  • For vegetarians, substitute chicken broth with vegetable broth.
  • Use gluten-free gnocchi to make the dish gluten-free.
  • Sun-dried tomatoes packed in oil provide richer flavor; drain slightly if preferred less oily.
  • Gnocchi can be store-bought or homemade based on preference.
  • Adjust seasoning with salt and pepper to taste, especially if using salted broth or cheese.
