Ingredients

Vegetables & Aromatics

  • 1 yellow onion
  • 4 cloves garlic
  • 1 jalapeño, deseeded and diced
  • 1 cup frozen corn

Proteins & Beans

  • 1½ lbs. boneless, skinless chicken thighs
  • 2 15 oz. cans cannellini beans, drained
  • 1 15 oz. can pinto beans, drained

Canned Goods & Liquids

  • 1 7 oz. can diced green chiles
  • 3 cups chicken broth

Spices & Seasonings

  • 1 Tbsp olive oil
  • 1 Tbsp ground cumin
  • 1 tsp dried oregano
  • ¼ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp freshly cracked black pepper

Dairy

  • 4 oz. cream cheese
  • ½ cup sour cream

Instructions

  1. Sauté Aromatics: Dice the onion and mince the garlic. Deseed and dice the jalapeño. Heat olive oil in a large pot over medium heat and add the onion, garlic, and jalapeño. Sauté until the onions have softened and are fragrant.
  2. Add Ingredients: Add the chicken thighs, cannellini beans, pinto beans, diced green chiles, ground cumin, dried oregano, smoked paprika, cayenne pepper, garlic powder, black pepper, and chicken broth to the pot. Stir well to combine all ingredients.
  3. Bring to Boil: Place a lid on the pot and increase heat to medium-high to bring the chili to a rolling boil.
  4. Simmer Chili: Once boiling, reduce heat to medium-low and let the chili simmer gently for 30 minutes, stirring occasionally to prevent sticking.
  5. Shred Chicken: After simmering, remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the pot along with the frozen corn. Stir to combine and heat through.
  6. Add Cream Cheese and Sour Cream: Cut the cream cheese into chunks and stir it into the chili until fully melted. Next, stir in the sour cream to add creaminess. For a thicker chili, mash some of the beans against the side of the pot with the back of a spoon.
  7. Adjust Seasoning and Serve: Taste the chili and adjust seasoning as needed. Serve hot with your favorite toppings such as shredded cheese, cilantro, or tortilla chips.

Notes

  • Use chicken thighs instead of breasts for more flavorful, tender meat.
  • Deseeding the jalapeño reduces heat; keep seeds if you prefer spicier chili.
  • For a thicker chili, mash some beans or reduce broth slightly.
  • Leftovers store well in the fridge for up to 4 days and freeze beautifully.
  • Optional toppings include shredded cheese, avocado, cilantro, or crushed tortilla chips.
