Delightfully fresh and light cucumber sandwiches featuring a creamy herb spread, perfect for tea parties, light lunches, or elegant appetizers. These sandwiches combine the subtle crunch of thinly sliced cucumbers with a smooth mixture of cream cheese, mayonnaise, and fresh herbs, all nestled between soft white bread slices.

Ingredients

Herb Cream Cheese Spread

  • 8 ounces cream cheese, softened
  • 3 tablespoons mayonnaise
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon chopped fresh chives
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste

Sandwich

  • 1 English cucumber, thinly sliced
  • 1 loaf white bread (or bread of choice), crusts removed

Instructions

  1. Prepare the Herb Cream Cheese Spread: Using a hand mixer, blend the softened cream cheese and mayonnaise together in a small bowl until smooth. Next, fold in the chopped fresh dill, chives, garlic powder, and season with salt and black pepper to taste, ensuring the mixture is evenly combined.
  2. Spread the Mixture: Evenly spread the cream cheese herb mixture on one side of each bread slice, covering the surface completely to ensure every bite has flavor.
  3. Layer the Cucumbers: Thinly slice the cucumber and arrange the slices over half of the bread slices that have been spread with the cream cheese mixture. Optionally, sprinkle additional fresh herbs on top for extra aroma and taste.
  4. Assemble the Sandwiches: Place the remaining bread slices, cream cheese side down, on top of the cucumber-layered bread. Remove the crusts if desired, then cut each sandwich into three smaller pieces for easy serving and elegant presentation.
  5. Serve or Store: Serve immediately to enjoy maximum freshness and crispness, or cover and store the prepared sandwiches in the refrigerator for up to 24 hours, making them perfect for preparing ahead for events.

Notes

  • For a gluten-free version, substitute the white bread with gluten-free bread.
  • To enhance flavor, add a sprinkle of lemon juice over the cucumber slices before assembly.
  • Keep sandwiches refrigerated if not serving immediately to maintain freshness.
  • Use thinly sliced cucumbers to avoid sogginess and maintain a crisp texture.
  • These sandwiches can be customized with additional fresh herbs like tarragon or parsley for varied taste profiles.
