Ingredients

Buns

  • 1 cup + 2 tablespoons + 1 teaspoon milk
  • 1 teaspoon active dry yeast
  • 2 1/4 cups bread flour
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 2 tablespoons + 2 teaspoons butter
  • 1 room temperature egg, lightly beaten

Filling

  • 1/2 cup packed brown sugar
  • 2 tablespoons cinnamon
  • 1 tablespoon flour
  • 1/4 cup room temperature butter

Frosting

  • 4 ounces whipped cream cheese
  • 2 tablespoons room temperature butter
  • 1/4 cup sugar

Instructions

  1. Melt Butter and Activate Yeast: Melt the butter in the microwave and set aside to cool. In a small bowl, mix together the milk and active dry yeast and let it sit until the yeast activates.
  2. Mix Dry Ingredients: In a large bowl, combine the bread flour, salt, and sugar to evenly distribute the dry ingredients for your dough.
  3. Combine Wet Ingredients: Once the butter has cooled slightly, add it to the milk and yeast mixture and whisk together. Then add the beaten egg and mix thoroughly to incorporate.
  4. Form Dough and Proof: Add the wet mixture to the dry ingredients and stir until fully combined into a wet dough. Cover with plastic wrap and allow the dough to proof (rise) for 2 hours until it doubles in size.
  5. Prepare Filling: In a small bowl, mix the brown sugar, cinnamon, and flour together. Set aside for later use.
  6. Roll out Dough: After 2 hours of proofing, generously flour your work surface and hands. Drop the dough onto the floured surface, dust with more flour, and roll out into a 14" x 20" rectangle.
  7. Spread Butter and Add Filling: Evenly spread 1/4 cup of room temperature butter over the rolled dough using your hands by squeezing and massaging the butter into the dough. Then evenly sprinkle the cinnamon sugar mixture over the buttered surface.
  8. Roll and Cut Dough: Starting from a short edge, roll the dough tightly into a log. Use a knife to score 8 even notches, then cut the log into 9 equal pieces carefully.
  9. Proof Rolls: Place each cinnamon roll into a parchment-lined 8x8 inch pan. Cover with plastic wrap and let them proof for another hour at room temperature or refrigerate overnight if prepping ahead.
  10. Preheat Oven and Bake: Preheat the oven to 350°F (175°C). Bake the cinnamon rolls for 35 minutes until golden brown and cooked through.
  11. Make Frosting: While the rolls bake, cream together the butter and sugar until fluffy using a rubber spatula. Fold in the whipped cream cheese gently, then place the frosting in the fridge until ready to use.
  12. Frost Rolls: Frost the cinnamon rolls immediately after baking for a melty, Cinnabon-style frosting, or allow the rolls to cool slightly before frosting if you prefer the frosting to hold shape. Serve fresh for best results.

Notes

  • Be generous with flour when rolling out the dough to prevent sticking as the dough is very soft and wet.
  • Proofing is key to light, fluffy rolls — do not rush the rising times.
  • If preparing ahead, refrigerate the proofed rolls overnight to bake fresh the next day.
  • Adjust cinnamon sugar filling to taste if desired for more or less sweetness/spice.
  • Use room temperature ingredients for smoother dough and frosting consistency.
