Ingredients

Oatmeal Base

  • 3 cups old-fashioned rolled oats
  • 1/2 cup lightly packed brown sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt

Wet Ingredients

  • 1 1/4 cups dairy or non-dairy milk (such as cow's milk, almond milk, or oat milk)
  • 1/4 cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 6 tablespoons melted butter or oil (such as melted butter, coconut oil, or vegetable oil)

Toppings (optional)

  • Additional milk
  • Fresh berries
  • Sliced bananas
  • Chopped nuts

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). If you plan to refrigerate the mixture overnight, you can skip this step for now.
  2. Prepare Baking Pan: Lightly grease a 9x13-inch baking dish or use a smaller pan if you want thicker oatmeal. Set it aside.
  3. Mix Dry Ingredients: In a large bowl, combine the rolled oats, brown sugar, baking powder, and salt. Stir well to evenly distribute the ingredients.
  4. Mix Wet Ingredients: In another bowl or measuring cup, whisk together the milk, pure maple syrup, eggs, vanilla extract, and melted butter or oil until fully combined.
  5. Combine Wet and Dry: Pour the wet ingredients into the bowl with the oat mixture. Stir until all the oats are evenly coated and the mixture is uniform.
  6. Transfer to Pan: Pour the oat mixture into the prepared baking dish, spreading it out evenly. Cover the dish and refrigerate if making ahead (up to 24 hours) or proceed to baking immediately.
  7. Bake: Place the uncovered baking dish in the preheated oven and bake for 25-30 minutes, or until the edges turn lightly golden and the oatmeal is fully set.
  8. Serve: Remove from the oven and serve warm. Add extra milk and your choice of toppings like berries, bananas, or nuts for enhanced flavor and texture.

Notes

  • If using quick oats instead of rolled oats, expect a softer texture and reduce baking time slightly.
  • Non-dairy milks such as almond, soy, or oat milk work perfectly as a substitute for dairy milk.
  • Butter can be replaced with coconut oil or vegetable oil for a dairy-free option.
  • You can prepare this oatmeal the night before by mixing and refrigerating it covered, then baking it fresh in the morning.
  • Customize toppings based on your preference - nuts add crunch, while fruits add freshness.
