These Easy BBQ Chicken Sliders are perfect for a quick and delicious party appetizer or family meal. Made with tender shredded rotisserie chicken coated in tangy BBQ sauce, caramelized onions, and topped with a creamy coleslaw, all sandwiched in soft King's Hawaiian rolls. The sliders are baked to perfection with a buttery brown sugar glaze that adds a hint of sweetness and caramelization to the buns.

Ingredients

For the Chicken Sliders

  • 2 tablespoons butter
  • 1 onion, sliced
  • Salt and pepper, to taste
  • 12 King's Hawaiian dinner rolls
  • 4 cups shredded rotisserie chicken (skin and bones removed)
  • 1 cup BBQ sauce of choice
  • 3 tablespoons butter
  • 1 tablespoon brown sugar
  • ¼ teaspoon dried parsley

For the Coleslaw

  • 2 cups coleslaw mix
  • 3 tablespoons coleslaw dressing

Instructions

  1. Preheat and prepare: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Cook onions: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced onions, season with salt and pepper to taste, and cook for 6-8 minutes, stirring frequently, until the onions become translucent and caramelized. Remove from heat.
  3. Prepare buns: Using a bread knife, carefully slice the King's Hawaiian rolls in half horizontally. Place the bottom halves on the prepared baking sheet.
  4. Mix chicken filling: In a large bowl, combine the shredded rotisserie chicken, cooked onions, and 1 cup BBQ sauce. Stir well so the chicken is evenly coated with the sauce.
  5. Assemble sliders: Spread the BBQ chicken and onion mixture evenly over the bottom halves of the buns. Then place the top halves of the buns back on top.
  6. Make butter glaze: In a small bowl, combine 3 tablespoons butter, 1 tablespoon brown sugar, and ¼ teaspoon dried parsley. Microwave for about 10 seconds until melted and stir to combine.
  7. Glaze buns: Brush the butter and brown sugar mixture evenly over the top buns.
  8. Bake sliders: Tent the baking sheet loosely with foil and bake in the preheated oven for 15-20 minutes. Remove the foil and bake an additional 5 minutes to toast the buns slightly.
  9. Prepare coleslaw: While the sliders bake, mix 2 cups coleslaw mix with 3 tablespoons of coleslaw dressing in a bowl until well combined.
  10. Add coleslaw to sliders: Remove the sliders from the oven, lift the top buns carefully, spread an even layer of the prepared coleslaw on the chicken filling, then replace the top buns.

Notes

  • Use your favorite BBQ sauce for a customized flavor.
  • For extra flavor, you can add pickles or jalapeños to the sliders.
  • Rotisserie chicken makes this recipe incredibly quick and easy, but you can also use leftover cooked chicken.
  • If you prefer a spicier coleslaw, add a pinch of cayenne pepper to the dressing.
  • Sliders can be assembled a few hours ahead and refrigerated, just bake before serving.
