Ingredients

Vegetables & Herbs

  • ½ medium red onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 4 ears of corn, about 3 cups kernels
  • ⅓ cup cilantro, chopped

Seasonings & Others

  • 2 tbsp butter
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • juice from ½ lemon

Instructions

  1. Melt Butter: In a large skillet over medium heat, melt 2 tablespoons of butter completely to create the cooking base.
  2. Sauté Onion and Bell Pepper: Add the chopped red onion and red bell pepper to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables are softening and slightly translucent.
  3. Add Garlic: Stir in the minced garlic and sauté for 1 minute, allowing the garlic to release its aroma without burning.
  4. Incorporate Corn: Add the fresh corn kernels to the skillet, mixing well with the other sautéed vegetables.
  5. Season: Sprinkle in the salt, black pepper, chili powder, and smoked paprika evenly over the mixture. Stir thoroughly to combine the spices with the vegetables.
  6. Cook Together: Continue sautéing the mixture for an additional 3 minutes, allowing the corn to cook through and the spices to develop their flavors.
  7. Finish with Lemon and Cilantro: Remove from heat and stir in the fresh lemon juice and chopped cilantro for bright, fresh flavors before serving.

Notes

  • For a spicy kick, add a pinch of cayenne pepper or chopped jalapeño when adding spices.
  • Use fresh corn for best texture and sweetness; frozen corn can be substituted but may affect texture slightly.
  • This dish pairs well with grilled meats, tacos, or as a standalone vegetarian side.
  • For a vegan version, substitute butter with olive oil or a plant-based margarine.
  • Adjust salt and chili powder to taste based on dietary preferences.
