Ingredients

Carrots

  • 2 pounds baby carrots (washed and patted dry)

Glaze

  • 3 tablespoons butter (melted)
  • 2 tablespoons olive oil
  • 3 tablespoons honey

Seasonings

  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with foil to prevent sticking and facilitate easy cleanup.
  2. Prepare the carrots: Wash and pat the baby carrots dry. For thicker carrots, slice them in half lengthwise to ensure even cooking throughout.
  3. Make the glaze: In a small bowl, mix melted butter, olive oil, honey, Italian seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper to create a flavorful glaze.
  4. Toss the carrots: Place the carrots in a large bowl and thoroughly toss them in the prepared glaze, ensuring each carrot is well-coated.
  5. Arrange on baking sheet: Spread the glazed carrots in a single layer on the foil-lined baking sheet, making sure not to overcrowd them for even roasting.
  6. Roast the carrots: Bake in the preheated oven for 25 to 30 minutes, flipping the carrots halfway through the baking time to promote even caramelization and tenderness.
  7. Optional broil for extra caramelization: When the carrots are fork-tender, you can broil them for 2 to 3 minutes until golden brown. Watch carefully to avoid burning.

Notes

  • For even cooking, slice thicker carrots in half lengthwise before roasting.
  • Do not overcrowd the baking sheet to allow proper roasting and caramelization.
  • Optional broiling at the end adds extra caramelization but requires close monitoring to prevent burning.
  • These roasted baby carrots can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the oven or a skillet for best texture retention.
