This easy slow cooker flank steak recipe delivers tender, flavorful beef with minimal effort. Marinated in a tangy blend of balsamic vinegar, honey, and Dijon mustard, the steak is slow-cooked until perfectly tender, making it an ideal dish for a hassle-free, satisfying meal.

Ingredients

Flank Steak and Marinade

  • 1.5-2 pounds flank steak
  • ⅓ cup balsamic vinegar
  • ¼ cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Prepare the Marinade: In a small bowl, combine balsamic vinegar, olive oil, honey, Worcestershire sauce, Dijon mustard, minced garlic, kosher salt, and ground black pepper. Whisk together until well blended and smooth.
  2. Combine Steak and Marinade: Place the flank steak into the slow cooker. Pour the prepared marinade over the steak, using a spatula or tongs to flip the steak once or twice to ensure it is evenly coated with the marinade.
  3. Slow Cook the Steak: Cover the slow cooker and cook the flank steak undisturbed. Use the low setting for 6 hours or the high setting for 3 to 4 hours, until the steak is very tender and easily pierced with a fork.
  4. Rest and Slice: Carefully transfer the cooked steak to a cutting board. Allow it to rest for 10 minutes to redistribute juices. Then, slice the steak against the grain into thin strips before serving to maximize tenderness.

Notes

  • For best flavor, marinate the steak in the refrigerator for 1-2 hours before slow cooking, if time permits.
  • Slicing against the grain is crucial for tenderness; look for the muscle fibers and cut perpendicular to them.
  • Leftover steak can be refrigerated for up to 3 days or frozen for up to 3 months.
  • This recipe pairs well with roasted vegetables, mashed potatoes, or a fresh green salad.
