Ingredients

Turkey Burger

  • 1 lb ground turkey (can sub ground beef or chicken)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt + pepper, to taste
  • 1 cup shredded cheddar cheese

Sweet Potato Fries

  • 2 medium sweet potatoes (cut into thin fries)
  • 1-2 tbsp olive oil or avocado oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt + pepper, to taste

Pickled Red Onions

  • 1/2 red onion (thinly sliced)
  • 1/2 cup apple cider vinegar
  • 1 tbsp maple syrup or honey
  • 1/2 tsp salt
  • 1/2 cup hot water

Bowl Toppings

  • 4 cups chopped romaine or butter lettuce
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (sliced)
  • 1 cup pickles

Greek Yogurt Secret Sauce

  • 1/2 cup plain Greek yogurt or blended cottage cheese
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp pickle juice
  • 1 tsp maple syrup
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt + pepper, to taste

Instructions

  1. Pickle the Red Onions: Add the thinly sliced red onions to a jar or bowl. Pour over the apple cider vinegar, maple syrup, salt, and hot water. Stir gently to combine, then let sit for at least 10–15 minutes to develop flavor, longer if possible.
  2. Air Fry Sweet Potato Fries: Toss the sweet potato fries with olive or avocado oil, garlic powder, paprika, salt, and pepper in a bowl until evenly coated. Air fry the fries at 375°F (190°C) for 12–15 minutes, shaking the basket halfway through to ensure even cooking and crispiness.
  3. Cook the Turkey Burger Meat: Heat a skillet over medium-high heat. Add the ground turkey, season with garlic powder, onion powder, paprika, salt, and pepper. Cook, stirring occasionally, until the meat is browned and slightly crispy, about 8-10 minutes.
  4. Melt the Cheese: Sprinkle shredded cheddar cheese over the hot cooked turkey in the skillet. Allow it to melt slightly before removing from heat.
  5. Prepare the Greek Yogurt Secret Sauce: In a bowl, whisk together the Greek yogurt, ketchup, mustard, pickle juice, maple syrup, garlic powder, smoked paprika, salt, and pepper until smooth and creamy.
  6. Assemble the Bowls: Arrange chopped lettuce in each bowl. Top with the cooked turkey burger meat with melted cheese, halved cherry tomatoes, sliced avocado, pickles, pickled red onions, and air-fried sweet potato fries.
  7. Drizzle and Serve: Generously drizzle the Greek yogurt secret sauce over each bowl. Serve immediately and enjoy!

Notes

  • For a different protein, substitute ground turkey with ground beef or chicken.
  • Pickled onions can be made ahead and stored in the fridge for up to 1 week.
  • Adjust seasonings to taste, especially salt and spices.
  • If you don’t have an air fryer, you can bake sweet potato fries at 425°F (220°C) for 20-25 minutes on a baking sheet, flipping halfway.
  • The Greek yogurt sauce can be swapped for blended cottage cheese for a different texture.
  • To make it vegan, replace ground turkey with plant-based meat and use vegan cheese and yogurt alternatives.
