Ingredients

Main Ingredients

  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (8 oz) block cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese

Spices and Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste

Fresh Vegetables and Garnishes

  • ½ cup chopped green onions
  • ½ cup diced red bell pepper
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • ¼ cup chopped fresh cilantro (optional)
  • Extra shredded cheese for topping (for hot version)
  • Crumbled bacon and fresh cilantro for garnish (optional, hot version)

Instructions

  1. Prepare Corn: If using fresh corn, cut the kernels off the cob. For canned corn, drain and rinse thoroughly. If you are using frozen corn, thaw it completely and drain any excess moisture to avoid sogginess in the dip.
  2. Combine Dairy Base: In a large mixing bowl, blend the sour cream, mayonnaise, and softened cream cheese together until the mixture is smooth and creamy. If the cream cheese is firm, use a hand mixer to soften it thoroughly before adding the other ingredients.
  3. Add Cheeses and Spices: Incorporate the shredded cheddar and pepper jack cheeses into the dairy base. Then add the garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper, stirring everything until evenly mixed.
  4. Fold in Vegetables: Carefully fold in the prepared sweet corn, chopped green onions, diced red bell pepper, and finely chopped jalapeño. If using cilantro, add it at this stage and mix gently to combine.
  5. Choose Serving Style - Cold or Hot: For a cold dip, cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with additional green onions, cheese, or cilantro before serving. For a hot dip, preheat your oven to 375°F (190°C). Transfer the mixture to a baking dish, sprinkle extra shredded cheese on top, and bake for 20–25 minutes until the dip is bubbly and golden. Optionally, garnish with crumbled bacon and fresh cilantro before serving.

Notes

  • This dip can be served cold or hot based on your preference.
  • Removing jalapeño seeds reduces the heat if a milder dip is desired.
  • Using a hand mixer for cream cheese ensures a smooth dip without lumps.
  • Garnish with fresh herbs or extra cheese to enhance presentation and flavor.
  • Leftovers can be stored in the refrigerator in an airtight container for up to 3 days.
