A refreshing and vibrant Fennel and Mango Slaw that combines crisp fennel, sweet mangoes, and zesty lime, perfect as a light side dish or salad. This quick and easy recipe is enhanced with fresh cilantro and a touch of heat from jalapeno or chili flakes, making it a flavorful addition to any meal.

Ingredients

For the Slaw

  • 1 large head of fennel (or 2 small ones)
  • 3 ripe mangoes (preferably yellow ones)
  • Juice of 1 lime
  • 1 bunch of fresh cilantro
  • Extra virgin olive oil, to taste (approx. 2 tablespoons)
  • 1 small jalapeno or 1 teaspoon chili flakes (optional)
  • Salt & pepper, to taste

Instructions

  1. Prepare the fennel and mango: Thinly slice the fennel bulb to create crisp, delicate strips. Peel the mangoes, carefully removing the pits, and slice the fruit into pieces roughly the same size as the fennel slices for balanced texture.
  2. Prepare the cilantro and jalapeno: Strip the cilantro leaves from the stems, finely mince the leaves, and reserve the stems for another use such as broth. If using fresh jalapeno, remove the membrane and seeds to control heat, then finely chop the pepper.
  3. Combine ingredients in a bowl: Add the fennel, mango, cilantro leaves, and jalapeno or chili flakes (if using) into a large mixing bowl. Dress the mixture with lime juice, a drizzle of extra virgin olive oil, and season with salt and pepper to taste.
  4. Adjust seasoning and serve: Mix everything thoroughly and taste. Adjust lime juice, salt, or pepper as needed to balance flavors. Serve immediately as a fresh and tangy slaw side dish.

Notes

  • For extra crunch, refrigerate the slaw for 15-30 minutes before serving.
  • You can substitute lime juice with lemon juice for a different citrus profile.
  • Remove jalapeno seeds to reduce heat or omit altogether for a milder flavor.
  • Use the reserved cilantro stems to flavor stocks or broths for zero waste.
  • This slaw pairs well with grilled meats, seafood, or as a topping for tacos.
