Ingredients

Wet Ingredients

  • 1 1/4 cups buttermilk
  • 1 cup canned pumpkin puree
  • 4 large eggs
  • 6 tablespoons butter, melted
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice

Instructions

  1. Mix Wet Ingredients: In a large bowl, whisk together the buttermilk, pumpkin puree, eggs, melted butter, and vanilla extract until you have a smooth, well-combined mixture.
  2. Mix Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, baking soda, ground nutmeg, salt, ground ginger, and ground allspice until evenly combined.
  3. Combine Mixtures: Add the dry ingredients to the wet ingredients and gently mix until just combined and no dry streaks remain. Be careful not to overmix to keep the waffles tender and fluffy.
  4. Heat Waffle Maker: Preheat your waffle maker to medium heat according to the manufacturer's instructions.
  5. Cook Waffles: Scoop the batter onto the hot waffle maker and cook until the waffles turn golden brown and crisp on the outside.
  6. Serve: Serve the waffles warm with your favorite toppings such as butter, maple syrup, buttermilk syrup, or Nutella for a perfect breakfast.

Notes

  • Use canned pumpkin puree for the best texture and flavor.
  • Do not overmix the batter to ensure fluffy, tender waffles.
  • If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 1/4 cups of milk and let it sit for 5 minutes.
  • Adjust spices to your taste if desired for a more or less spicy flavor.
  • Waffles can be kept warm in a low oven while finishing the rest of the batter or frozen for later use.
