This fresh mango salsa is a vibrant and flavorful mix of ripe mangoes, crisp bell pepper, red onion, fresh cilantro, and a hint of spicy jalapeño, all brightened with zesty lime juice. Perfectly balanced between sweet and spicy, this salsa is ideal for serving with chips, tacos, salads, or enjoying on its own as a refreshing snack.

Ingredients

Fresh Mango Salsa Ingredients

  • 3 ripe mangos, diced
  • 1 medium red bell pepper, chopped
  • ½ cup chopped red onion
  • ¼ cup packed fresh cilantro leaves, chopped
  • 1 jalapeño, seeded and minced
  • 1 large lime, juiced (about ¼ cup lime juice)
  • ⅛ to ¼ teaspoon salt, to taste

Instructions

  1. Combine Ingredients: In a serving bowl, add the diced mango, chopped red bell pepper, chopped red onion, fresh cilantro, and minced jalapeño. Drizzle the mixture with the juice of one large lime.
  2. Mix Salsa: Using a large spoon, gently stir all the ingredients together to evenly distribute the flavors and lime juice throughout the salsa.
  3. Season & Rest: Add salt to taste, stirring again to incorporate. For optimal flavor, let the salsa rest for at least 10 minutes or longer to allow the flavors to meld beautifully before serving.

Notes

  • This mango salsa recipe is adapted from the mango pico in Thai mango cabbage wraps.
  • Store any leftovers covered in the refrigerator for several days, though it’s best enjoyed fresh.
  • The salsa pairs wonderfully with tortilla chips, tacos, salads, or as a standalone refreshing treat.
