Ingredients

Cake:

  • 2 ½ cups cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup butter, softened
  • 1 ¾ cups sugar
  • 5 egg whites, room temperature
  • ⅓ cup sour cream, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup whole milk, room temperature
  • 1 lb fresh or frozen strawberries

Frosting:

  • 2 cups freeze-dried strawberries (about 1 ounce or ½ cup ground to powder)
  • 8 ounces cream cheese, room temperature
  • ½ cup butter, room temperature
  • 3 cups confectioner's sugar
  • 1-2 tablespoons milk
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions

  1. Prepare Strawberry Puree: Puree the fresh or frozen strawberries in a food processor or blender until smooth, measuring 1 cup of puree. Transfer to a saucepan and simmer over medium heat for 10-15 minutes, reducing it to about ½ cup. Set aside to cool completely.
  2. Preheat and Prepare Pans: Preheat your oven to 350ºF (175ºC). Grease and flour two 9-inch cake pans and line them with parchment paper for easy removal.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set this mixture aside.
  4. Cream Butter and Sugar: Using a stand mixer fitted with a whisk attachment, beat the softened butter and sugar on high speed until the mixture is smooth and creamy, about 2 minutes.
  5. Add Egg Whites and Wet Ingredients: Beat in the egg whites on high speed until combined, about 2 more minutes. Add the sour cream and vanilla extract and mix well. With the mixer on low, gradually add the dry ingredients just until incorporated.
  6. Incorporate Milk and Strawberry Puree: Slowly pour in the milk while mixing on low, blending until just combined. Then gently whisk in ½ cup of the cooled strawberry puree, taking care not to overmix the batter.
  7. Bake the Cake: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 24-25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 15 minutes, then invert onto wire racks to cool completely before frosting.
  8. Prepare Strawberry Powder: Process the freeze-dried strawberries in a food processor until they become a fine powder. Set aside.
  9. Make the Frosting: In a stand mixer bowl, beat the cream cheese on high speed until creamy, about 1 minute. Add the butter and mix until combined. Add the strawberry powder and blend well. Gradually add the confectioner's sugar, then add 1 tablespoon of milk and the vanilla extract, beating until smooth and fluffy. Add more milk if needed to reach desired consistency. Finally, mix in the salt.
  10. Assemble the Cake: Place one cake layer inverted onto a cake stand or serving plate. Spread a generous layer of frosting over the top. Place the second layer upside down atop the first and spread the remaining frosting evenly over the sides and top of the cake.
  11. Chill Before Serving: Refrigerate the assembled cake for at least 45 minutes to set the frosting before slicing. Keep stored in the refrigerator to maintain freshness.

Notes

  • For best results, bring all refrigerated ingredients to room temperature before starting.
  • Using fresh or frozen strawberries is fine, but ensure they are thawed and drained if frozen.
  • Freeze-dried strawberries can be found in specialty stores or online; they provide intense strawberry flavor without adding moisture to the frosting.
  • If the frosting is too thick, add milk a teaspoon at a time to reach your preferred consistency.
  • Leftover cake should be refrigerated and consumed within 3-4 days.
