Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the frittata.
  2. Mix Base Ingredients: In a bowl, whisk together the eggs, almond milk, minced garlic, and sea salt until fully combined. Set this egg mixture aside.
  3. Prepare Broccoli Feta Variation: Heat 1 tablespoon olive oil in a 10 or 12-inch cast-iron skillet over medium heat. Add chopped scallions, broccoli, and a pinch of salt and pepper. Cook, stirring occasionally, until broccoli is tender yet bright green, about 5 to 8 minutes. Stir in smoked paprika. Pour in the egg mixture and gently shake the pan to evenly distribute. Sprinkle crumbled feta on top.
  4. Prepare Roasted Red Pepper & Spinach Variation: Heat ½ tablespoon olive oil in the skillet over medium heat. Add chopped shallot with salt and pepper, cooking until translucent, about 5 minutes. Add roasted red peppers and spinach, cooking until the spinach wilts. Pour in the egg mixture and gently shake to distribute evenly. Sprinkle crumbled feta cheese over the top.
  5. Prepare Spring Veggie Variation: Heat ½ tablespoon olive oil in the skillet over medium heat. Add chopped scallions and asparagus with salt and pepper, cooking until asparagus is tender and bright green, about 5 minutes. Stir in peas. Pour in the egg mixture, shaking the pan gently to distribute. Add mini mozzarella balls and crumbled feta on top.
  6. Prepare Mixed Mushroom & Tarragon Variation: Heat 1 tablespoon olive oil in the skillet over medium heat. Add chopped shallot with salt and pepper, cooking about 3 minutes until softened. Add chopped mushrooms and cook without stirring too often until soft, about 8 minutes. Stir in chopped tarragon. Add the egg mixture, gently shaking the pan to distribute. Sprinkle grated pecorino cheese on top.
  7. Prepare Caprese Variation: Heat ½ tablespoon olive oil in the skillet over medium heat. Add chopped shallot with salt and pepper and cook until translucent, about 5 minutes. Add cherry tomatoes and half the basil, stirring briefly. Pour in the egg mixture and distribute evenly by shaking the pan. Add mini mozzarella balls on top.
  8. Bake the Frittata: Place the skillet in the preheated oven and bake for 15 to 20 minutes, or until the eggs are fully set and cooked through.
  9. Finish and Serve: Remove the skillet from the oven, season with additional salt and pepper to taste, and for Caprese variation, top with remaining fresh basil. Slice and serve warm.

Notes

  • Use a cast-iron skillet or an oven-safe nonstick skillet to ensure even cooking and easy transfer to oven.
  • The basic egg mixture can be prepared ahead of time and refrigerated for up to 24 hours before cooking.
  • Feel free to swap feta with goat cheese or ricotta for a different flavor profile.
  • Adjust seasoning and baking time depending on your oven and skillet size.
  • Adding fresh herbs like tarragon, chives, or basil enhances freshness and aroma.
  • The recipe scales easily; increase eggs and ingredients proportionally for larger skillets.
