A quick and flavorful Garlic Parmesan White Beans recipe featuring creamy cannellini beans sautéed with garlic, cherry tomatoes, and aromatic spices, finished with fresh parsley, tangy lemon juice, and shaved Parmesan cheese. Perfect as a warm side dish or a hearty dip served with crusty bread or pita.

Ingredients

Beans and Vegetables

  • 3 to 4 garlic cloves, minced
  • 2 (15-ounce) cans cannellini beans, drained
  • 1 cup cherry tomatoes, halved

Spices and Seasonings

  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Aleppo pepper
  • ½ teaspoon cumin

Dressing and Garnish

  • Extra virgin olive oil (about 2 tablespoons for cooking + additional for finishing)
  • 1 cup chopped fresh parsley
  • ¼ to 1/3 cup shaved Parmesan cheese
  • ¼ cup grated Pecorino Romano cheese
  • Juice of half a lemon

Instructions

  1. Sauté the Garlic: In a large pan over medium heat, warm 2 tablespoons of extra virgin olive oil. Add the minced garlic and cook briefly, stirring regularly until it just turns golden. This releases the garlic’s aroma without burning it.
  2. Cook the Beans and Tomatoes: Add the drained cannellini beans and ½ cup of water to the pan. Season with kosher salt, black pepper, Aleppo pepper, and cumin. Add the halved cherry tomatoes. Cook the mixture, stirring occasionally, until everything is warmed through and flavors meld together, about 10 minutes.
  3. Finish with Fresh Ingredients: Stir in the chopped fresh parsley, shaved Parmesan cheese, grated Pecorino Romano, and the juice of half a lemon. Mix well to combine all flavors evenly.
  4. Serve: Drizzle generously with extra virgin olive oil before serving. Enjoy immediately with pita bread or your favorite crusty bread for a wonderful accompaniment.

Notes

  • Use fresh garlic for best flavor; adjust the amount to suit your preference for garlic intensity.
  • The Aleppo pepper adds mild heat and a fruity undertone—substitute with crushed red pepper flakes if unavailable.
  • For a creamier texture, mash some of the beans with the back of a spoon while cooking.
  • This dish pairs beautifully with toasted pita or crusty artisan bread to soak up the flavorful juices.
  • To make it vegan, omit the Parmesan and Pecorino cheeses or use plant-based cheese alternatives.
