This flavorful grilled chicken breast recipe features a savory marinade with garlic, balsamic vinegar, and herbs, delivering juicy and tender results perfect for a quick and healthy meal. The chicken is marinated to infuse bold flavors, then grilled to perfection and garnished with fresh parsley for a vibrant finish.

Ingredients

Marinade

  • 3 cloves garlic, finely chopped
  • 1/4 cup balsamic vinegar
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp brown sugar
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Chicken

  • 4 (6- to 8-oz.) boneless, skinless chicken breasts
  • Chopped fresh parsley, for serving

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together finely chopped garlic, balsamic vinegar, extra-virgin olive oil, brown sugar, dried rosemary, and dried thyme. Generously season the marinade with kosher salt and freshly ground black pepper. Reserve 1/4 cup of this marinade to use later during grilling.
  2. Marinate the Chicken: Add the boneless, skinless chicken breasts to the bowl with the remaining marinade. Toss well to coat each piece evenly. Cover the bowl and refrigerate for at least 20 minutes to allow the flavors to penetrate the chicken, or up to overnight for deeper flavor infusion.
  3. Preheat the Grill: Prepare your grill for medium-high heat and preheat it for about 5 minutes to ensure it's hot and ready for cooking.
  4. Grill the Chicken: Place the marinated chicken breasts on the hot grill. Baste the chicken with the reserved 1/4 cup marinade to keep it moist and flavorful. Grill for approximately 6 minutes per side, turning halfway through the cooking time. Use an instant-read thermometer to check that the internal temperature reaches 165°F (74°C) to ensure the chicken is fully cooked and safe to eat.
  5. Serve: Transfer the grilled chicken to a platter and garnish generously with chopped fresh parsley. Serve immediately for best taste.

Notes

  • For more intense flavor, marinate the chicken overnight in the refrigerator.
  • Ensure the grill is properly preheated to avoid sticking and to achieve those beautiful grill marks.
  • If you don’t have a grill, this recipe can be adapted for stovetop grilling using a grill pan or broiling in the oven.
  • Let the chicken rest for a few minutes after grilling to retain its juices before serving.
  • Adjust seasoning according to your taste preference.
