Delicious and easy-to-make Grilled Pesto Chicken Wraps featuring tender rotisserie chicken, creamy mozzarella, fresh basil pesto, artichoke hearts, and creamy avocado, all wrapped in warm tortillas and grilled to crispy perfection. Perfect for a quick dinner or lunch that combines fresh flavors with a satisfying crunch.

Ingredients

Main Ingredients

  • 1/2 cup grated mozzarella (dairy free if needed)
  • 1/3 cup basil pesto (store-bought or homemade)
  • 1 cup shredded rotisserie chicken (or leftover chicken)
  • 1/2 cup canned artichoke hearts (chopped)
  • 1 avocado (pitted and sliced)
  • 2 tsp Italian seasoning
  • 2 large flour tortillas
  • Arugula or fresh basil (optional)
  • Oil for grilling (such as olive oil or vegetable oil)

Instructions

  1. Assemble the Wraps: In the center of each tortilla, layer the grated mozzarella, basil pesto, shredded chicken, chopped artichoke hearts, and sliced avocado. Sprinkle with Italian seasoning for a burst of flavor, then top with a handful of arugula or fresh basil if desired for added freshness.
  2. Preheat the Grill Pan: Heat a grill pan or skillet over medium-high heat until hot, preparing it for grilling the wraps. This ensures a nice sear and crispiness on the tortillas.
  3. Roll and Oil the Wraps: Fold the sides of each tortilla inward and roll them up tightly like a burrito. Brush both sides of each wrap with oil to help them crisp evenly and prevent sticking to the pan.
  4. Grill the Wraps: Place the wraps on the hot grill pan and cook for 4-6 minutes on each side, turning carefully. Grill until the tortillas are golden brown and crispy, the cheese is melted, and the filling is warm throughout.
  5. Serve Warm: Remove the wraps from the grill pan and let them rest for a minute before slicing if desired. Serve immediately while warm and enjoy the combination of melty cheese, savory chicken, and fresh pesto flavors.

Notes

  • You can substitute the flour tortillas with whole wheat or gluten-free tortillas to suit dietary preferences.
  • For a dairy-free version, use dairy-free mozzarella cheese.
  • Leftover rotisserie chicken is an excellent shortcut for this recipe, saving prep time.
  • If you don’t have a grill pan, a regular skillet or griddle will work as well.
  • Adding fresh veggies like sliced bell peppers or tomatoes inside the wrap can add extra crunch and nutrition.
