Ingredients

Main Ingredients

  • 8 wooden skewers
  • 2 lbs sockeye salmon (or another fresh salmon of your choice)
  • 3-4 lemons
  • 3 tablespoons olive oil
  • Kosher salt and freshly ground black pepper, to taste

For Serving

  • 1 recipe Basil Vinaigrette

Instructions

  1. Soak Skewers: Soak the wooden skewers in water for at least one hour to prevent them from burning during grilling.
  2. Preheat Grill: Heat your grill to medium-high heat to prepare for cooking the salmon skewers evenly.
  3. Prepare Salmon and Lemons: Cut the salmon into 1-inch cubes. Slice 3 of the lemons into very thin slices using a sharp knife or mandolin for layering on the skewers.
  4. Assemble Skewers: Alternate threading the salmon cubes and lemon slices onto the soaked wooden skewers, aiming for about 5-6 pieces of salmon per skewer. Drizzle the skewers with olive oil, season with kosher salt and freshly ground black pepper, then squeeze half of the remaining lemon juice over them.
  5. Grill Skewers: Using tongs, carefully place the salmon skewers on the preheated grill. Grill for approximately 3 minutes per side until the salmon is nearly cooked through.
  6. Rest and Serve: Remove the skewers from the grill and let them rest for about 5 minutes so the salmon continues cooking gently. Serve the skewers with the prepared Basil Vinaigrette and additional lemon wedges if desired.

Notes

  • Soaking the wooden skewers prevents them from burning on the grill.
  • Using sockeye salmon provides a rich flavor and vibrant color, but you can substitute with other fresh salmon varieties.
  • Thin lemon slices add freshness and a slight tang to the skewers.
  • Resting the salmon after grilling helps retain juices and finish cooking evenly.
  • The Basil Vinaigrette adds a bright, herbaceous complement to the smoky grilled salmon.
