Deliciously seasoned grilled potatoes cooked in a foil packet on the grill, offering a perfect blend of herbs and spices with a tender and flavorful result. This easy recipe is ideal for a summer barbecue or a side dish to complement any grilled entrée.

Ingredients

Potatoes

  • 2 lbs. red potatoes

Seasoning and Oil

  • 2-3 tablespoons olive oil
  • 1 teaspoon rosemary
  • ¾ teaspoon oregano
  • ¾ teaspoons thyme
  • ¾ teaspoons sage
  • 1/8 teaspoons nutmeg
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Prepare the seasoning mix: Combine rosemary, oregano, thyme, sage, nutmeg, salt, and pepper in a bowl. Drizzle olive oil over the spice mixture and stir well to create a uniform seasoning blend.
  2. Slice the potatoes: Cut the red potatoes into ½ inch thick slices, removing thin slices from the round ends to ensure each piece can lay flat on the grill for even cooking.
  3. Toss potatoes with seasoning: Place the sliced potatoes into a large bowl and pour the olive oil and seasoning mixture over them. Toss thoroughly to coat all slices evenly with the seasoned oil.
  4. Preheat the grill: Set the grill to medium-high heat and allow it to reach the desired temperature before cooking the potatoes.
  5. Prepare foil packet: Lay down two large pieces of foil layered together on a flat surface, then coat the top foil with cooking spray to prevent sticking.
  6. Arrange potatoes on foil: Lay the seasoned potatoes in a single layer on the foil, if possible, to promote even cooking. Cover with another sheet of foil and tightly seal the edges to form a secure packet.
  7. Grill the potatoes: Place the foil packet on the preheated grill and close the lid. Cook for 10 minutes, then carefully flip the packet using kitchen tongs. Close the lid again and grill for an additional 10 minutes, or until the potatoes are fork-tender and cooked through. Remove from the grill and serve immediately.

Notes

  • Choosing red potatoes ensures a creamy texture that holds up well on the grill.
  • Using a foil packet traps heat and moisture, cooking the potatoes evenly and preventing them from drying out.
  • You can add other herbs or spices like paprika or garlic powder for extra flavor.
  • Make sure to seal the foil packet tightly to avoid steam escaping during grilling.
  • Adjust cooking time slightly based on grill temperature or potato thickness.
