This grilled sirloin steak recipe guarantees a perfectly cooked, juicy steak every time, seasoned with a flavorful marinade of olive oil, Worcestershire sauce, and Italian herbs. Ideal for outdoor grilling, it features detailed steps for marinating, grilling, and resting the steaks to achieve your desired doneness.

Ingredients

Marinade

  • 1/4 cup Olive oil
  • 3 tbsp Worcestershire sauce
  • 3 tbsp Coconut aminos (or soy sauce)
  • 2 tbsp Lemon juice
  • 1 tbsp Italian seasoning
  • 6 cloves Garlic (minced)
  • 1 tbsp Sea salt
  • 1/2 tsp Black pepper

Steak

  • 4 8-oz Sirloin steaks (at least 1 inch thick, preferably 1.5 inches)
  • 4 tbsp Compound Butter (optional, but recommended for serving)

Instructions

  1. Prepare the Marinade: Whisk together olive oil, Worcestershire sauce, coconut aminos or soy sauce, lemon juice, Italian seasoning, minced garlic, sea salt, and black pepper in a small bowl until fully combined.
  2. Marinate the Steaks: Pour the marinade into a gallon zip lock freezer bag. Add the sirloin steaks, seal the bag, and gently move the steaks around to coat them evenly with the marinade.
  3. Allow to Marinate: Refrigerate the steaks in the marinade for at least 3 to 8 hours, but no more than 24 hours to prevent mushy texture.
  4. Bring to Room Temperature: About 30 minutes before grilling, remove the steaks from the refrigerator to come to room temperature while keeping them in the marinade until just before cooking. This helps the steaks cook more evenly.
  5. Preheat the Grill: Preheat your grill to high heat, approximately 500 degrees F (260 degrees C), for at least 15 minutes to ensure a good sear.
  6. Sear the Steaks: Place the steaks on the hot grill and close the lid. Sear the first side for 2 minutes, then flip the steaks, close the lid again, and sear the other side for 2 minutes.
  7. Grill to Desired Doneness: Lower the grill's heat to medium-low and continue grilling with the lid closed. For steaks 1.5 inches thick, grill 1-2 minutes for rare (120°F), 2-3 minutes for medium rare (130°F), 3-4 minutes for medium (140°F), 4-5 minutes for medium well (150°F), or 5-6 minutes for well done (160°F). For 1-inch thick steaks, they can be cooked to medium rare after searing without additional time.
  8. Rest the Steaks: Transfer the steaks to a plate, place a tablespoon of compound butter on each if desired, tent with foil, and let rest for 5 minutes before serving. Resting allows the juices to redistribute for maximum flavor.

Notes

  • Do not marinate steaks for more than 24 hours to avoid mushy texture.
  • Allowing steaks to come to room temperature before grilling promotes even cooking.
  • Use a meat thermometer for precise doneness.
  • Compound butter is optional but adds richness and flavor.
  • Adjust cooking times slightly depending on steak thickness and grill temperature variations.
