Ingredients

Beef Filling

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup water
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 2 teaspoons Mexican oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

Burritos

  • Cooking spray
  • 6 large flour tortillas
  • 1½ cups shredded Mexican cheese blend
  • 1½ cups cooked rice
  • 1 (15-ounce) can black beans, rinsed and drained

Instructions

  1. Cook the Beef and Onion: Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped onion, season with salt and pepper, and cook while crumbling the beef until fully browned and cooked through.
  2. Add Seasonings and Simmer: Stir in water, tomato paste, chili powder, Mexican oregano, garlic powder, and cumin. Reduce heat to medium-low and cook, stirring occasionally, until the sauce thickens, approximately 3 to 5 minutes.
  3. Assemble the Burritos: Lay one tortilla flat. Layer with ¼ cup shredded cheese, ¼ cup cooked rice, ½ cup of the seasoned ground beef mixture, and ¼ cup black beans.
  4. Roll the Burrito: Beginning at one end, roll the tortilla tightly, folding in the sides as you go to enclose the filling completely. Set the rolled burrito aside and repeat with remaining tortillas and fillings.
  5. Pan-Fry the Burritos: Wipe the skillet clean and spray it with cooking spray. Place each burrito seam side down in the skillet over medium heat. Cook for 2 minutes per side, gently turning to ensure the burrito becomes crispy and golden on all sides.
  6. Serve: Serve the burritos warm with optional sides such as guacamole, salsa, and sour cream.

Notes

  • Use fresh or homemade tortillas for best flavor and texture.
  • For a spicier kick, add diced jalapeños or hot sauce to the beef mixture.
  • To keep burritos warm before serving, place them on a baking sheet in a low oven (around 200°F) while finishing the rest.
  • Leftover burritos can be wrapped in foil and refrigerated for up to 3 days or frozen for longer storage.
  • Use a non-stick skillet or cast iron pan for even crisping when pan-frying.
