These Halloumi Burgers are a delicious vegetarian twist on the classic burger, featuring crispy fried halloumi cheese, fresh microgreens, juicy tomato slices, and tangy tzatziki sauce all nestled in a soft hamburger bun. Perfect for a quick and satisfying meal that can be ready in just 15 minutes.

Ingredients

Main Ingredients

  • 3 tablespoons extra virgin olive oil
  • 500 grams Halloumi cheese (2 blocks), sliced in half
  • 4 hamburger buns, sliced in half
  • 2 cups microgreens
  • 1 small red onion, sliced
  • 4 slices tomato, 1/4-inch thick
  • ½ cup tzatziki sauce

Instructions

  1. Fry Halloumi: In a large non-stick skillet, heat 3 tablespoons of extra virgin olive oil over medium heat until it sizzles, approximately 1-2 minutes. Carefully add the halved halloumi slices to the skillet and fry them until they become browned and crispy on each side, about 3-4 minutes per side. Once cooked, remove the halloumi and set it aside on a plate.
  2. Assemble Burgers: Take the bottom halves of the hamburger buns and layer ½ cup of microgreens (or a leaf of lettuce) on each. Place one crispy block of fried halloumi on top of the greens. Drizzle 1 to 2 tablespoons of tzatziki sauce over the cheese, then add several slices of red onion and a slice of tomato to each burger.
  3. Serve: Place the top halves of the buns onto the assembled burgers. Serve immediately while the halloumi is warm, alongside your choice of crispy french fries, a fresh side salad such as coleslaw, or a creamy macaroni salad for a complete meal.

Notes

  • Halloumi cheese is firm and salty, perfect for frying without melting.
  • Make sure the skillet and oil are hot before adding the cheese to get a nice crispy crust.
  • You can substitute microgreens with fresh lettuce if preferred.
  • Tzatziki sauce adds a refreshing and tangy flavor; you can use store-bought or homemade.
  • Serve immediately for the best texture and flavor, as halloumi can become rubbery when reheated.
