This classic Hamburger Gravy recipe is a rich, comforting sauce made with lean ground beef, aromatic onions and garlic, thickened with a buttery flour roux, and seasoned with beef bouillon, sage, and thyme. Perfectly versatile, it’s served warm over mashed potatoes, pasta, rice, biscuits, or breakfast potatoes, making it a hearty addition to any meal.

Ingredients

Main Ingredients

  • 1 pound lean ground beef
  • 1/3 cup chopped onion
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 tablespoon butter
  • 3 tablespoons all-purpose flour
  • 2 teaspoons beef bouillon paste (or 2 beef bouillon cubes)
  • 2 ½ cups milk
  • 1/8 teaspoon ground sage
  • 1/8 teaspoon dried thyme
  • Salt and pepper, to taste
  • Crushed red pepper flakes, to taste (optional)

Instructions

  1. Cook meat: Add the lean ground beef to a deep skillet over medium-high heat. Cook the beef while crumbling it into small pieces until it is browned evenly. Once cooked, remove most of the grease from the pan, but leave a little for flavor. Then add the chopped onions and minced garlic to the skillet and cook for 2-3 minutes until the onions soften and become translucent.
  2. Make the gravy: Stir in the flour and butter to coat the cooked meat and vegetables. Gradually add the milk along with the beef bouillon paste (or cubes) to the skillet. Season with ground sage, dried thyme, salt, pepper, and crushed red pepper flakes if using. Stir frequently and continue to cook until the gravy thickens, usually about 5 to 10 minutes. Taste and adjust seasoning if necessary.
  3. Serve: Once the gravy has thickened and flavors have melded, serve it warm poured over mashed potatoes, biscuits, bread, pasta, rice, or breakfast potatoes for a comforting and hearty meal.

Notes

  • For a richer gravy, use whole milk or add a splash of cream.
  • You can substitute beef bouillon paste with low-sodium beef broth if preferred.
  • To make this dish gluten-free, substitute all-purpose flour with a gluten-free flour blend.
  • Adjust crushed red pepper flakes to control the heat level or omit them for a milder flavor.
  • Leftover gravy can be refrigerated for up to 3 days and gently reheated before serving.
