Ingredients

Dough

  • 2 ¼ tsp yeast (1 packet, instant yeast recommended)
  • ¾ cup (172g) almond milk, lukewarm
  • 3 Tbsp (30g) coconut sugar
  • 2 cups (240g) all-purpose flour
  • 1 ¾ cup (210g) white whole wheat flour
  • ½ tsp salt
  • 3 eggs, room temperature
  • 1 tsp vanilla extract
  • 9 tbsp (127g) unsalted butter, room temperature

Filling

  • ½ cup (113g) unsalted butter, melted
  • 1 ½ tsp (10g) cinnamon
  • 2/3 cup (100g) coconut sugar

Frosting

  • ½ cup (113g) cream cheese, cold
  • ¼ cup (56g) plain Greek yogurt, cold
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Prepare the dough: Heat the almond milk to 110°F by microwaving for 30-40 seconds or warming it gently on the stove. Stir in the yeast and coconut sugar. If using active dry yeast, let it sit for 15 minutes until foamy; if using instant yeast, proceed to the next step.
  2. Mix dry ingredients: In the stand mixer bowl, combine all-purpose flour, whole wheat flour, and salt.
  3. Add wet ingredients: Add the yeasted almond milk, eggs, and vanilla extract to the dry ingredients and mix on low-medium speed until a dough ball forms, about 3 minutes.
  4. Incorporate butter: With the mixer running, add the room temperature butter a few pieces at a time, allowing full incorporation before adding more. Then increase speed to medium-high and knead for 8-10 minutes, or knead by hand over a floured surface until the dough is elastic and passes the light test with no tears.
  5. Proof the dough: Transfer the dough to a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size. Alternatively, refrigerate overnight and bake the next morning.
  6. Make the filling: Combine melted butter, cinnamon, and coconut sugar in a bowl and set aside just before shaping the rolls.
  7. Shape the rolls: On a floured surface, roll the dough into a 1/4-inch thick rectangle. Spread the cinnamon-sugar filling evenly and gently rub it in. Roll the dough tightly from the long edge and seal the seam.
  8. Cut the rolls: Using a serrated knife or dental floss, cut the rolled dough into 12 equal 2-inch pieces and place them in a greased 9x13 inch or 10.5x7.5 inch baking dish.
  9. Second rise: Allow the rolls to rise at room temperature for 45 minutes to 1 hour, until puffed and nearly doubled.
  10. Preheat oven: Heat oven to 350°F (175°C) near the end of the second rise.
  11. Bake: Bake the cinnamon rolls for 20-25 minutes or until golden brown and the filling bubbles.
  12. Prepare frosting: Beat cold cream cheese and Greek yogurt until smooth with an electric mixer. Add maple syrup and vanilla extract and mix until combined.
  13. Ice and serve: Spread the frosting over warm cinnamon rolls and enjoy immediately.

Notes

  • For best results, use instant yeast to skip the 15-minute proofing step after mixing yeast with milk.
  • When proofing overnight in the fridge, allow dough to come to room temperature before shaping and second rise.
  • If dough tears during the elasticity test, knead for an additional 1 minute and recheck.
  • Use dental floss or a serrated knife to get clean cuts without squashing the rolls.
  • Check rolls closely in the last few minutes of baking to prevent overbrowning.
