Ingredients

Vegetables

  • 4 cloves garlic
  • 1 yellow onion
  • 4 carrots
  • 4 ribs celery
  • 1 green bell pepper
  • 6 cups chopped cabbage (½ head)
  • ½ lb. frozen green beans
  • ¼ cup chopped parsley

Liquids

  • 1 28 oz. can diced tomatoes (with juices)
  • 1 8 oz. can tomato sauce
  • 6 cups vegetable broth
  • 1 Tbsp lemon juice

Oils & Seasonings

  • 1 Tbsp olive oil
  • ½ Tbsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp freshly cracked black pepper
  • 1 tsp salt (adjust to taste)

Instructions

  1. Prepare Vegetables: Mince the garlic cloves, dice the onion, peel and slice the carrots, slice the celery, dice the green bell pepper, and chop the cabbage into 1-inch pieces to ensure even cooking.
  2. Sauté Aromatics: In a large pot over medium heat, heat the olive oil and add the garlic, onion, carrots, celery, and bell pepper. Sauté these vegetables until the onions soften and become translucent, which develops the base flavor.
  3. Add Tomatoes and Seasonings: Stir in the diced tomatoes with their juices, tomato sauce, frozen green beans, and chopped parsley. Add smoked paprika, dried oregano, thyme, and freshly cracked black pepper. Cook, stirring for 1-2 minutes to blend the flavors.
  4. Combine Cabbage and Broth: Add the chopped cabbage to the pot along with the vegetable broth. Stir everything together so the ingredients are well combined.
  5. Simmer Soup: Cover the pot with a lid and increase the heat to medium-high to bring the soup to a boil. Once boiling, reduce heat to medium-low and let it simmer gently. Stir occasionally and cook for about 40 minutes, or until the cabbage becomes tender according to your preference.
  6. Season and Finish: Taste the soup and season with salt, starting with ½ teaspoon and adjusting as needed. Finally, stir in the lemon juice to brighten the flavors. Serve the soup hot, ideally accompanied by crusty bread for dipping.
